What is Aioli?
Aioli (often misspelled as aioli) is seasoned mayonnaise. But non-mayo lovers, don’t fret! I don’t like mayonnaise, but love aioli! How can that be? Did you know mayo makes the best base for a lot of sauces and dips you love?
How to Use Truffle Aioli
Truffle Aioli can enhance so many dishes. Some of my favorite things to include Truffle Mayo on are:
- Burgers
- Grilled Cheese
- BLT’s
- Fish
- Party and Picnic Sandwiches
- Pizza (so good with caramelized onions and olive oil sauce)
- to dip fries (like my amazing Truffle Fries)
- to dip tater tots
- drizzle onto asparagus
- blended into mashed potatoes
- in scalloped potatoes
- to dip Baked Artichoke (Roasted Artichoke)
- to dip crab cakes
- add 1/4 c into dips like my Spinach Dip with Cream Cheese (Creamy Spinach Dip Recipe) just before baking
Truffles are a rare, aromatic fungi that grow only in few soil and climate conditions. They grow underground alongside the roots of certain trees. Because of their unique growing conditions they’re considered a delicacy. Truffles have an insanely good flavor that makes them great to top pasta, fondue, infuse into oils, butters, aiolis and more.
What Kind of Truffle Oil to Use to Make Truffle Aioli
White and black truffle oil are interchangeable, so it’s completely up to you! The difference is subtle, but black truffles (frequently grown in France) tend to offer more of an earthy flavor and aroma. White truffles, often grown in Italy, are considered more delicate and have a garlic aroma.
Where to Purchase Truffle Oil
If your local grocer doesn’t carry it, you can find it in specialty food stores, Whole Foods, Williams Sonoma and of course, Amazon.
How to Make Truffle Mayo
It’s so easy! We’re skipping a step since we’re not making our own mayo with egg yolks. This Truffle Aioli is also made with sour cream, truffle oil, minced garlic, pepper, lemon juice, sea salt and pepper. White pepper helps you maintain a smooth, creamy color, but you can substitute black pepper, if needed.
You can use your food processor to make it, but I just whip it up in a mixing bowl and combine until smooth.
How to Store Aioli
Store Truffle Aioli refrigerated in an airtight container for up to 3 days.

Ingredients
- 1/2 c mayonnaise
- 1/2 c sour cream
- 1 tbsp truffle oil
- 1 tsp minced garlic
- 1/2 tsp pepper white, if possible
- 1 tbsp lemon juice
Instructions
Combine ingredients and blend until smooth.
Recipe Notes
You can substitute black pepper for white pepper
