What is Aioli?

Aioli is basically just seasoned mayonnaise. But non-mayo lovers, don’t fret! I don’t like mayonnaise, but love aioli!

How can that be? Did you know mayo makes the best base for a lot of sauces and dips you love?

What are Truffles?

Truffles are a rare, aromatic fungi that grow only in few soil and climate conditions. They grow underground alongside the roots of certain trees.

Because of their unique growing conditions they’re considered a delicacy. Truffles have an insanely good flavor that makes them great to top pasta, fondue, infuse into oils, butters, aiolis and more.

Truffle Mayo Ingredients

  • Sour Cream – Full fat is preferred, but you can substitute light in a pinch.
  • Truffle Oil – White or black truffle oil, your choice!
  • Minced Garlic – Fresh minced or minced garlic in a jar.
  • Lemon Juice – Fresh squeezed is preferred, but you can substitute 100% Lemon Juice (found in the produce section of your grocer) if needed.
  • Pepper – White pepper helps you maintain a smooth, creamy color, but you can substitute black pepper, if needed.
  • Sea Salt

Variations

  • Add a tablespoon of fresh herbs for a fragrant spin… rosemary and basil are perfect additions.

How to Make Truffle Aioli

It’s so easy! We’re skipping a step since we’re not making our own mayo with egg yolks.

  1. Combine – Using a food processor or mixing bowl and spatula or whisk, combine ingredients until smooth.
  2. Serve – Enjoy on your favorite sandwiches, vegetables, sides and more!

What kind of truffle oil is best to make truffle aioli?

White and black truffle oil are interchangeable, so it’s completely up to you! The difference is subtle, but black truffles (frequently grown in France) tend to offer more of an earthy flavor and aroma. White truffles, often grown in Italy, are considered more delicate and have a garlic aroma.

Where’s the best place to purchase truffle oil?

If your local grocer doesn’t carry it, you can find it in specialty food stores, Whole Foods, Williams Sonoma and of course, Amazon.

    We drizzled this over our asparagus last night and it was amazing! What an easy way to turn an ordinary dish into something elegant!
