Spinach Artichoke Dip

  • This Spinach Artichoke Dip recipe is a favorite of my husband and I.  I recommend making it for larger gatherings because it requires a lot of ingredients and makes a substantial amount.  However, it is easy to make and as good or better than local Houston’s!

    1 package frozen chopped spinach

    1 can artichoke hearts, chopped and strained

    1 onion, chopped

    1 stick of butter

    ½ teaspoon cayenne pepper

    1 tsp garlic powder

    salt and pepper, to taste

    8 oz cream cheese

    8 oz Monterey jack cheese, shredded

    4 oz swiss cheese, grated

    4 oz mozzarella cheese, grated

    6 oz heavy whipping cream

    4 oz parmesan
    Cook spinach in saucepan on medium with 1/2 cup water.  Strain.  Saute onion in butter until tender.  With a beater {or your KitchenAid mixer}, beat cream on medium and gradually fold in cream cheese until completely creamy.  Add all remaining ingredients and add to large dish.  Allow it to marinate in the refrigerator for 2 hours.  Bake at 350 for 25 minutes and serve with french or sourdough bread, crackers, tortilla chips, or vegetables.  Also pairs well with salsa and sour cream!
