Waffles have entered the foodie scene in nearly every style and genre of delicious eats – they are popular food truck items and can be paired with every type of savory flavor! They are so much more than breakfast.

In this case, waffles take a Tex Mex spin and can become fabulous breakfast tacos, or more traditional fillings, and of course, all the dessert taco ideas you can imagine.

What are Waffle Tacos?

Well, it’s probably exactly what you’re thinking it is! Just use a waffle to replace the classic crunchy taco shell or your favorite soft flour tortillas.

A waffle taco can work with any type of filling, although Taco Bell made them famous as a breakfast item filled with eggs and all the classic breakfast burrito fillings.

We enjoy them with classic savory fillings, but they are delicious as a dessert, too. There’s just something about that soft, yet crispy waffle when paired with fruit, whipped cream and Nutella… should I go on?

Waffle Tacos: Ingredients and Substitutions

We’re sharing two of our favorite filling options – one is a savory egg mixture for breakfast, and one is great for dessert.

Egg Waffle Tacos

  • Waffles – Fresh or frozen, thawed. We chose Eggo homestyle waffles for ours!
  • Sausage – Or ground beef, or your favorite taco fillings. We cooked up a traditional package of brown and serve sausage patties, crumbling along the way.
  • Eggs – Scrambled

  • Jalapeños – You can used fresh sliced or diced, or pickled or jarred, too.
  • Red Peppers – Or any of your other favorite toppings!
  • Cilantro – Chopped

Dessert Waffle Tacos

  • Fruit – We used strawberries, but bananas or any of your favorites would work well too!
  • Whipped Cream – Fresh, homemade whipped cream is always best, but you can use any kind, of course!
  • Nutella – Use this Hazelnut spread, or any other myriad of options to drizzle on top!

Make Waffle Tacos in just Three Steps

  1. Gather ingredients. For savory waffle tacos, brown your sausage and cook your scrambled eggs. crumbled sausage in a cast iron pan Scrambled eggs in a cast iron pan

  • Sausage Brown and serve sausage patties, cooked and crumbled – 8 count
  • 6 Eggs Size large, scrambled
  • 6 ounces Cheese Shredded – choose your favorite!
