The luck of the Irish brought me to a group of incredibly creative and talented bloggers who always inspire. While our styles vary, our love for cocktails do not. We have teamed up to bring you an array of St. Patrick’s Day cocktails to help you celebrate in great taste. I don’t drink a lot of hard alcohol, so my cocktail contribution is an easy sip perfect for day drinking like showers, birthdays, brunches and of course, St. Patty’s day. I blended champagne, simple syrup and lemon juice to make a refreshing Sparkling Lemonade aka Shot of Gold.
There’s nothing better at the end of the rainbow or long day than a Shot of Gold. So grab a glass, rim it with sugar and let’s do this!

Shot of Gold | Sparkling Lemonade Recipe
Ingredients
- 1 c sugar
- 1 c water
- 2 c lemon juice
- 1 bottle champagne {about 3 cups} or sparkling juice
Instructions
- Combine sugar and water in a saucepan over medium and whisk until clear making a simple syrup. Remove from heat and allow to cool.
- Combine simple syrup, lemon juice and whisk in champagne. Serve chilled.
You can easily adapt this recipe to make a mocktail {perfect for baby showers} with sparkling juice.
I wish I could get together with my talented friends to celebrate St. Patrick’s Day, but I suppose our little cocktail party will have to do. I look forward to trying these new St. Patty’s Day sips!

I like how you rimmed it with the gold sugar. But even more so, that plant is just perfect for the shoot! It looks like a large three-leaf clover!
