I love quick and easy chicken recipes. This Piccata Milanese with Piccata Sauce is a family favorite – it comes together in less than 25 minutes! It’s a comforting Italian classic. Piccata is chicken breasts lightly dredged in flour and breadcrumbs, pan fried for a soft golden crust and finished with a light buttery piccata sauce.

Piccata Ingredients

  • Chicken Breasts – boneless skinless is preferred.
  • Flour – all purpose flour is the foundation for breading
  • Salt – a hint of salt brings out the flavor of all the other ingredients.
  • Pepper – I always like to use fresh cracked black pepper for a thick flake, but any pepper will do.
  • Egg + Water – egg and water allow the breadcrumbs to stick. Egg is also known for achieving that beautiful golden color.
  • Bread Crumbs – the essential ingredient in piccata to achieve that amazing crust.
  • Olive Oil – just enough to brown the breasts.

How to Make Piccata Milanese

There are so many methods of preparation of this amazing dish, but over the years I’ve simplified and perfected it. It’s quick and easy – ready in less than 30 minutes!

  1. Preheat oven.
  2. Place chicken breasts between 2 sheets of parchment paper or wax paper and pound it (I linked to my favorite tools below) to 1/4″ thick. Salt and pepper both sides.
  3. Combine flour, salt, pepper and pour onto a shallow dish or dinner plate. piccata sauce ingredients
  4. Beat egg and water. Pour onto another dinner plate.
  5. Put breadcrumbs on a third plate.
  6. Coat each chicken breast with flour mixture (removing excess flour), egg mixture, followed by breadcrumbs.
  7. In a skillet over medium heat, warm olive oil. Cook chicken breasts for 2 minutes on each side until golden brown. piccata milanese recipe
  8. Place chicken breasts in a baking dish and bake 8 minutes. breaded chicken piccata in casserole dish
  9. Meanwhile, remove any brown bits in the sauté pan with a paper towel and melt butter oven medium heat. Increase heat to high and add lemon juice, white wine, capers, salt and pepper. Boil until reduced in half (2 minutes).
  10. Spoon the piccata sauce over the chicken breasts and serve. Optional: serve with fresh chopped parsley or parmesan cheese.

Piccata Sauce Ingredients

Butter – the ingredient that gives Piccata Milanese it’s melt-in-your-mouth quality. Salted or unsalted, it’s your choice!

Lemon Juice – a hint of lemon juice makes this dish taste bright and balances the flavors.

Wine – You can use your favorite white wine and enjoy the remainder of the bottle, which I highly recommend. Use a crisp or wine with high acidity that isn’t sweet.

  • Pinot Grigio
  • Pinot Gris
  • Sauvignon Blanc
  • Unoaked Chardonnay

White cooking wine will also do! Cooking wine only has 5% alcohol whereas a bottle of wine will generally have between 10-13% alcohol. Use whichever you prefer.

Ingredients  

  • 3 boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg
  • 1 tablespoon water
  • 3/4 cup Italian bread crumbs
  • 1 tablespoon olive oil
  • 3 tablespoon butter
  • 1/3 cup lemon juice
  • 1/2 cup dry white wine see suggestions below
  • 1 tablespoon capers

Instructions 

  • Preheat oven to 400 degrees.
  • Place chicken breasts between 2 sheets of parchment paper. Pound to 1/4″ thick. Sprinkle with salt and pepper.
  • Combine flour, salt and pepper in a shallow plate. 
  • Beat egg and water and pour onto a plate.
  • Place breadcrumbs on a third plate. Dip chicken breasts into the flour mixture, remove excess, dip into egg mixture, followed by breadcrumbs.
  • In a sauté pan over medium heat warm olive oil. Brown chicken breasts 2 minutes on each side and place into a baking dish.
  • Bake chicken 8 minutes. 
  • Meanwhile, wipe sauté pan clean and melt butter over medium heat. Increase heat to high and add lemon juice, wine, and capers. Boil about 2 minutes or reduced by half.
  • Pour piccata sauce over chicken and serve.
