Funfetii should be a part of everything shouldn’t it? It just makes everything feel so much more fun! The sprinkles just scream party!

While it looks like a party, this funfetti cookie cake only takes a couple minutes to put together if you need a last minute cookie cake. No cake mix needed, just staple pantry ingredients for a delicious thick, chewy cookie cake you’ll love.

Funfetti Cookie Cake Ingredients

  • Butter – Unsalted, sweet cream butter is best for all baking recipes. Soften to room temperature.
  • Vegetable Oil – Using both butter and oil gives this cake it’s melt-in-your-mouth texture and flavor! 
  • Sugar – White granulated sugar.
  • Powdered Sugar – Also known as confectioner’s sugar, this ingredient gives it the texture and consistency you’ll love!
  • Vanilla – Pure vanilla extract (not imitation) for the best flavor.
  • Eggs – Bring the eggs to room temperature for best results. I
  • Flour – Unbleached all-purpose flour is all you need. 
  • Salt
  • Cream of Tartar
  • Baking Soda – This helps to give this homemade funfetti cookie cake a bit of extra lift.
  • Sprinkles – Be sure to get regular sprinkles, nonpareils sprinkles (the round ball like ones) will bleed into the batter!

How To Make This Funfetti Cookie Cake – Step by Step

  1. Preheat oven to 350 degrees.
  2. Combine butter, oil, sugars, and vanilla and mix until smooth before adding in the eggs.
  3. Add flour, salt, cream of tarter and baking soda until mixed in.
  4. Add sprinkles.
  5. Press the dough into a greased pan. Optional: sprinkle sprinkles over the top of cake and gently press onto cake with parchment paper.
  6. Bake 20 minutes
  7. Optional: Let cool and frost with buttercream for extra fun!

Tips To Make This Funfetti Cake

  • Baking time will vary depending on the pan you use. Reduce baking time for thinner cookie cakes checking in at 15 minutes and increase for thicker cakes if you want them more done.
  • When adding dough into the pan, careful to not overfill and factor in 1/3 of dish for the cake to rise
  • Try my super easy buttercream recipe if you’d like to frost your cake.
  • Forgot to take out your butter? To soften butter directly from the refrigerator, place the butter unwrapped in the microwave for 10-15 seconds.

How To Store 

  • Keep the cake covered in an airtight container. The funfetti cookie cake will stay fresh for up to 3 days at room temperature or up to 5 days in the refrigerator. Be sure to bring the cookie cake to room temperature before serving.
  • If you’ve made too much, the cookie cake can also be frozen up to 3 months covered in saran wrap and placed in a freezer bag. Be sure to thaw it overnight in the refrigerator before eating.

What Does Funfetti Taste Like?

Funfetti tastes like white cake but better thanks to the addition of sprinkles! Be sure the use quality sprinkles as some sprinkles have an aftertaste to them.
