- Chicken Breasts – Choose medium-sized chicken breasts that aren’t too thick on one side. If they are, pound with a meat mallet to even them out for better cooking.

How to Bake a Chicken Breast at 400
- Prep – Preheat oven. Coat your chicken in olive oil (no need to marinate) and place in a baking dish.
- Season – Sprinkle your favorite spices or seasonings on both sides of your chicken breast. You can even go simple with just salt and pepper if you prefer.
- Bake – Uncovered, as directed.
- Rest, Slice and Serve – Pull your chicken out of the oven and allow it to rest. Slice, dice or shred, and serve as suggested below.

- This recipe is for chicken breasts that are approximately an inch thick. Depending on the thickness, you may need to add on a few extra minutes of cooking time.
- Rest time is very important. Allow the chicken to rest for 10 minutes after removing from the oven! It will continue to cook, sealing in the moisture.
- Use a meat tenderizer to pound the chicken if one side of the chicken is thicker than the other side. This should help it cook more evenly.

This sounds so good – I’m going to try it – but I have a question – does this work if your chicken is frozen? I always have chicken in the freezer but forget to take it out to thaw and if I defrost in the microwave it starts to cook and then it tastes dried out! Help!
I’m not sure how long it would take to bring frozen chicken to a baked state. I also worry it wouldn’t be as juice. If you decide to try it you can use an internal meat thermometer to ensure it reaches 165 degrees Fahrenheit. We tend to make this a lot on Mondays because I grocery shop on Sundays and can leave it refrigerated.
