Yellow Party Punch

1 packet Kool Aid

2 c sugar
3.5 quarts water (14 cups)
1 can orange juice concentrate
1 can pineapple juice concentrate
Combine and stir, add 1 2-liter Ginger Ale just before serving and garnish with sliced lemons. For an extra kick, serve with rum.
Stuffed Mushroom Caps
A quick and easy appetizer! Wash and remove stems from mushrooms and place on a cookie sheet. Fill with your favorite Alouette and bake 8-10 minutes at 350 degrees.
Pan Fried Onion Dip
1-2 yellow onions
1/4 cup vegetable oil
4 Tbsp butter
1/2 tsp cayenne
1/2 tsp pepper
1 tsp salt
4 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
Chop onions. Heat butter and oil in large pan on medium heat. Add onions, cayenne, salt and pepper. Saute for 10 minutes. Reduce heat to medium low, stirring occasionally for 20 minutes. Allow to cool. Mix cream cheese, sour cream and mayonnaise until smooth. Add onions and mix well. Serve at room temperature with water crackers, vegetables, and potato chips.
Carmelized Onion and Goat Cheese Tarts
This recipe was introduced to me by my friend Jenny of The Bliss List. It quickly became a favorite!
1 onion (I prefer yellow), chopped
4 Tbsp unsalted butter
4 Tbsp brown sugar
4 oz goat cheese
2 sheets puff pastry
Melt butter over medium heat. Stir in brown sugar, then add chopped onions and stir occasionally for 10 minutes. Reduce heat to low and stir for an additional 20+ minutes.
Roll 2 sheets of puff pastry with a little flour. Cut into squares and place on slightly greased/floured cookie sheet. Add carmelized onions in the center, top with goat cheese and bake at 325 degrees for 15 minutes or until slightly golden.
Proscuitto Crostinis
2 french baguettes sliced thin
4 oz goat cheese
proscuitto, cut in rectangles
olive oil
salt & pepper
Place bread on cookie sheets and brush on olive oil. Top with proscuitto, goat cheese and salt and pepper. Bake 10 minutes at 350 degrees.
Cream Cheese Icing
One thing I never had growing up was pre-made icing. In just a couple of minutes with ingredients you have around your home, you too can have home made icing!
4 oz cream cheese, softened
4 Tbsp butter, softened
2 cups powdered sugar
1 tsp vanilla
Mix cream cheese and butter until smooth. Fold in 1 cup of powdered sugar at a time, add vanilla and mix until creamy.
Brownie Cupcakes
Using your favorite brownie mix, fill lined cupcake tins 1/2 full, inserting your favorite miniature candy bar (I used Reese’s Peanut Butter Cups). Bake at 350 degrees for 18-20 minutes.
