Every now and then, I love a great slice of cheesecake! One that’s light, flavorful, but not overly rich {and that’s easy to make}. We’re still swooning over this toffee cheesecake. The brown sugar shortbread crust is amazing by itself, but when paired with the creamy cheesecake layer and chocolate ganache, it’s to die for. At just 20 minutes hands on time, it’s great for holiday celebrations.

So let’s talk about this crust. Cookies, brown sugar & butter? What’s not to love? It is toffee like in itself.

Top that with a creamy cream cheese, chocolate and toffee mixture. The toffee melts, adding flavor while still retaining that cream texture. I use light cream cheese…you have to save somewhere, right? No one will know and to me, it keeps it from being overly rich. You don’t sacrifice an ounce of flavor! The heavy cream and chocolate topping complete this foolproof cheesecake.

We’re not going for a perfect slice here…to me, that says “this dessert came off of the Sysco truck.”  There’s nothing worse. This dessert is simply delicious and worth every calorie. Not that it has any.

Ingredients
  

  • 1 pkg shortbread cookies {I use Keebler Sandies}
  • 1/4 c brown sugar
  • 1/4 c butter melted
  • 2 pkgs 1/3 less fat cream cheese softened
  • 1/4 c sugar
  • 8 semi-sweet chocolate baking bar squares
  • 2 eggs
  • 2 tsp vanilla
  • 3/4 c toffee bits
  • 1/2 c heavy cream
  • 3/4 c semi-sweet chocolate chips
  • toffee bits to garnish

Instructions
 

  • Preheat oven to 325 degrees. Crush cookies to crumbs and mix with brown sugar and butter. Press into ungreased 9" springform pan and bake 4 minutes.
  • Beat cream cheese and sugar while melting chocolate squares. Blend in melted chocolate, vanilla. Add in eggs until blended well, but don't over mix. Fold in toffee bits. Pour on top of your crust and bake 50 minutes. Allow to cool for an hour while proceeding to the next step.
  • Bring cream to a boil in a small sauce pan on medium {about 3 minutes}. Place chocolate chips in a bowl and pour cream over them. Allow to set 5 minutes, then stir well. When the cheesecake has cooled, spread chocolate sauce over it, garnishing with toffee bits. Refrigerate overnight.
