There are a hundred ways to top a cheesecake, but only one this delightful {in my book}. This strawberry pinot reduction takes even the basics from boring to glory.

  • Strawberries: As fresh as possible and sliced thinly.
  • Pinot Noir: Use your favorite make – it doesn’t have to be overly expensive.
  • Sugar

How To Make A Pinot And Strawberry Cheesecake Topping

This delicious pinot and strawberry dessert topping comes together so quickly!

  1. In a sauce pan on a medium heat, add the strawberries, wine and sugar.
  2. Reduce. As with any reduction, the longer you cook it, the thicker and more syrupy it gets.

Variations

This reduction is just heavenly as is, but I would suspect that other fruits such as blackberries, cherries or even plums would also work well.

As the name suggests, this reduction makes an excellent topping for a cheesecake, whether you make your own or want to elevate a store bought one. This topping can be used for so many other deserts too. Try it on shortcake, ice cream, brownie or a waffle & your taste buds will never be the same!

How Long Does This Fruit Reduction Keep?

When I make this wine and strawberry cheesecake topping, I often make a double, if not triple batch as it keeps really well. Pop it into mason jars and it will keep for a good week, if not longer in the fridge. It also freezes really well. Let it cool to room temperature and then place in a freezable container.
