holiday salad recipe with vodka cranberry vinaigrette

I’m mixing up my favorite salads for the holidays. This time of year, cranberries are everywhere. They are the perfect addition to a holiday salad for late Fall and early winter. At my last wedding, the caterer made a salad I just couldn’t stop eating! She made a vodka cranberry vinaigrette. Of course, I went home and started working on recreating it. Surprisingly, I’ve never infused vodkas before, but it’s simple.

The vodka cranberry vinaigrette is so flavorful, it doesn’t require much else. Pepper, tomatoes, cheese…your pick.

To make cranberry infused vodka you’ll need:

1/2 c cranberries

1/8 c sugar

1 Tbsp water

1 c vodka

In a small saucepan, heat cranberries, sugar and water until the cranberries begin to pop. To speed the infusion process, press a wooden spoon on the cranberries and stir well. Pour vodka into a sealable glass jar. Add cranberry mixture and refrigerate 2 days. Strain and store up to a month.
