When I was in college, I spent holiday breaks working for a caterer whose philosophy was that food should always look as good as it tastes. I incorporate that philosophy into all of my easy recipes, including this Christmas Salad!

It is fun, fresh and festive. It requires minimal time, effort and cleanup ! You’ll never dread being asked to bring a salad to Christmas again!

Make Ahead

  • Assemble the salad, cover and refrigerate.
  • Combine vinaigrette ingredients in a sealed jar. Refrigerate, shake and drizzle onto salad to serve.

Any round food safe plate or platter will do!

To Store

  • At Room Temperature – This spinach salad can remain at room temperature for up to two hours while serving.
  • Refrigerate – Once the spinach is coated in dressing, it will wilt as it’s stored. It can be kept up to two days in the refrigerator after serving. However, if you want to prep this salad ahead of time, just make the dressing up to five days ahead!

Christmas Salad

A fun and festive Christmas Salad that looks as good as it tastes. This Christmas wreath salad is always memorable and is quick and easy to make!

Ingredients  

Vinaigrette

  • ½ cup raspberry vinegar
  • ¼ cup olive oil
  • 1 teaspoon white granulated sugar
  • 2 teaspoons dijon mustard

Salad

  • 10 ounces fresh spinach
  • ½ cup dried cranberries
  • ¼ cup walnuts
  • 3 ounces goat cheese

Instructions 

  • Add vinegar, olive oil, sugar and dijon mustard to a sealable jar or bowl. Seal and shake vigoursly or stir with a whisk to combine.
  • In a large bowl, add spinach (and cranberries and walnuts if you want more). Drizzle with vinaigrette and toss.
  • Shape salad into a wreath on platters or large plates.
  • Top with cranberries and walnuts.
  • Roll small amounts of goat cheese into balls and adorn your salad wreath.
