Caramel Pecan Pie Bites

  • I have to be honest, I feel I’ve been doing a disservice to you by sharing full size dessert recipes for the past 5 years. After all, how are you supposed to choose whether you want a piece of cheesecake or a piece of pie at Thanksgiving? I’ve adapted my favorite caramel pecan pie recipe so that you won’t have to. Just little bites of heaven, so you can truly indulge!

    Melt butter in saucepan, then add milk and caramels. All of them. Don’t try to sneak one!

    Stir frequently until smooth.

    Combine brown sugar, eggs, vanilla and salt and gradually add the caramel mixture.  Yes, all of it. It will be worth it, I promise!

    Stir in pecans and teaspoon into your phyllo cups. Bake. Enjoy.

    Caramel Pecan Pie Bites

    Servings 30 minis


    • 2 boxes pre-baked phyllo cups
    • 15 unwrapped caramels {small bag}
    • 2 Tbsp butter
    • 1/8 c milk
    • 1/4 c brown sugar packed
    • 1 egg 1 yolk
    • 1/2 tsp vanilla
    • 1/8 tsp salt
    • 2 oz bag pecan halves chopped {about a half cup}


    1. Preheat the oven to 350 degrees.
    2. In a saucepan over low heat, melt butter.
    3. Add milk and caramels. Cook, stirring frequently until smooth.
    4. In a large bowl/mixer, combine brown sugar, eggs, vanilla and salt.
    5. Add the caramel mixture and combine.
    6. Stir in pecans.
    7. Teaspoon mixture into phyllo cups {on a cookie sheet}.
    8. Bake 11 minutes, serve warm {you can heat them for a few minutes just before serving}
