I have to be honest, I feel I’ve been doing a disservice to you by sharing full size dessert recipes for the past 5 years. After all, how are you supposed to choose whether you want a piece of cheesecake or a piece of pie at Thanksgiving? I’ve adapted my favorite caramel pecan pie recipe so that you won’t have to. Just little bites of heaven, so you can truly indulge!

To Make Mini Caramel Pecan Pies, You Will Need:

You just need a few simple ingredients to make these mini pies!

  • Phyllo shells
  • Caramels
  • Butter and milk
  • Brown sugar
  • Egg yolk: Free run / organic
  • Vanilla extract: Pure is preferable over imitation
  • Salt
  • Pecan halves

How to Make Mini Caramel Pecan Pie Bites

It only takes 20 minutes to make a batch of these mini pies.

  1. Preheat the oven to 350 degrees.
  2. In a saucepan over low heat, melt butter.
  3. Add milk and caramels. Cook, stirring frequently until smooth.
  4. In a large bowl/mixer, combine brown sugar, eggs, vanilla and salt.
  5. Add the caramel mixture and combine.
  6. Stir in pecans.
  7. Teaspoon mixture into phyllo cups {on a cookie sheet}.
  8. Bake 11 minutes, serve warm

These mini pies are perfect to serve to guests that are visiting for the holidays. They are perfect to serve as finger food with some glasses of mulled wine or hot chocolate. They’re so cute and they look like you’ve spent hours in the kitchen – I won’t tell anyone!

I opted to use phyllo pastry for these mini pies instead of the traditional pie crust. It’s much letter and I love the added crispiness it lends to each bite. It makes these pies perfectly light and way too easy to eat!

Ingredients  

  • 30 phyllo shells mini, (2 boxes) pre-baked
  • 15 caramels unwrapped, small bag
  • 2 tablespoons butter
  • 1/8 cup milk
  • 1/4 cup brown sugar packed
  • 1 egg 1 yolk
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt
  • 2 ounces pecan halves chopped {about a half cup}
