"Healthy" Peanut Butter Cookies

I’m always looking for ways to cure my sweet tooth, without tipping the scale. These healthy peanut butter cookies are naturally skinny. I did the math they are just 80 calories, about half of a traditional peanut butter cookie, making them a great snack! This recipe is so incredible, you may have a difficult time stopping at just one. Maybe you have more willpower than I do? I love that they require just 6 staple ingredients, making them a great fix for a last minute craving! They’re gluten free, but you’ll never miss the flour. They stack up to traditional peanut butter cookies!

Serves: 2 dozen
  • 1 c peanut butter
  • 1 c sugar
  • 1 egg
  • ¼ tsp salt
  • 1 tsp vanilla
  • 1 tsp baking soda.
  1. Preheat oven to 350 degrees.
  2. Combine sugar, peanut butter & egg. Add salt, vanilla & baking soda.
  3. Roll into balls & bake 11 minutes.
