Chewy Oatmeal Coconut Cookies made with brown butter, for a rich, fall flavor. This Oatmeal Coconut Cookie recipe is a twist on an old favorite – they’re quick and easy to make for a last minute snack.
My sister is to thank for these incredible Oatmeal Coconut Cookies with Brown Butter. If you are new to my site, brown butter is – basically, magic! It elevates just about everything giving it a deeper, richer, more intense flavor that smells wonderful, too!
A couple weeks ago she was whipping up some Oatmeal Coconut Cookies when I stopped her in her tracks and made a few adjustments. They turned out so delicious that I saved them for Fall Cookie Week.

Oatmeal Cookie Ingredients
- Butter – salted or unsalted, your choice
- Brown Sugar
- Sugar
- Vanilla – homemade vanilla or store bought
- Baking Powder
- Baking Soda
- Salt
- Flour
- Quick Cooking Oats
- Shredded Coconut

- Cranberries
- Chocolate Chips
- White Chocolate Chips
- Peanut Butter Chips
- Salted Caramel Chips
- Nuts
How to Make Oatmeal Cookies with Coconut
These coconut cookies with oatmeal SO easy! They take just a few minutes to make and bake.
- Brown butter (optional). Remove from heat and allow to cool 5 minutes.
- Cream butter and sugars.
- Add eggs one at a time until just incorporated. Add vanilla.
- Add baking soda, powder, and salt.
- Add flour until just incorporated.
- Fold in oats and coconut.
- Chill dough 30 minutes.
- Using a scoop (or rolling into balls) drop on a parchment lined cookie sheet.
- Bake!
Coconut and oatmeal go so well together! The coconut make them so soft and the brown butter makes them deliciously chewy!
Tips for Oatmeal Coconut Cookies
- Mixing – Don’t over mix so that they’re chewy, not hard.
- How to Store – Store in an airtight container for up to a week. Add a slice of bread to soften, if needed.

Oatmeal Coconut Cookies
Ingredients
- 1 cup butter
- 1 1/4 cup brown sugar packed
- 3/4 cup white granulated sugar
- 1 tablespoon vanilla
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 1/4 cup all-purpose flour
- 1 cup quick cooking oats
- 1 1/2 cup shredded coconut
Instructions
- Brown butter in a sauce pan over medium heat until brown and it has a nutty aroma. Remove from heat and allow to cool 5 minutes.
- Preheat oven to 350 degrees.
- Cream butter and sugars.
- Add eggs one at a time until just incorporated. Add vanilla.
- Add baking soda, powder, and salt.
- Add flour until just incorporated.
- Fold in oats and coconut.
- Refrigerate dough 30 minutes.
- Using a scoop (or rolling into balls) drop on a parchment lined cookie sheet.
- Bake 8 minutes or until slightly golden.
