I love a delicious appetizer. And as much as I love to spend time in the kitchen with a big plan and lots of prep time, that’s not always a possibility in my life.

I’m always bringing you delicious apps, because they are my favorite thing. Quick and easy goat cheese spread, marinated cream cheese, and cream cheese bean dip are favorites that anyone can accomplish in a pinch.

I love guacamole – who doesn’t? I’ve shared a zesty guacamole dip with you, as well as a mango guacamole with a sweet flavor to match the heat.

  • Tostitos Scoops
  • Cherry Tomatoes (for topper)
  • Guacamole (Choose your favorite store bought or make your own, as follows)
  • 2 Avocados (ripe)
  • Greek yogurt
  • Lime Juice
  • Cilantro
  • Red Onion
  • Tomato
  • Jalapeno

Variations

  • Use our Mango Guacamole recipe instead of traditional.
  • Feeling cheesy? Add a sprinkle of your favorite Mexican cheese for a delicious topper. Crumbled cotija cheese is delicious, as well as shredded cheddar or pepper jack!
  • Spice things up with an extra slice of jalapeño on top alongside the tomato slice.

Tips

These are just as easy to make as they are to serve, but keep these tips in mind for the best outcome!

  • Learn how to cut an avocado here, and how to cut jalapeños here!
  • I find pre-packaged guacamole to often hold a little more moisture. If you use pre-made guac, be sure to make these immediately before serving so they don’t become soggy!
  • With homemade guacamole, I have been able to make these half an hour ahead of time with no problems.

How to Store

  • Room Temperature – You can safely leave guacamole sitting out at room temperature for up to two hours while serving. However, it will start to brown with oxidation within an hour, and it could make these guacamole bites a little soggy, so don’t make them too far in advance.
  • Refrigerate – While you can’t store these individual guacamole bites (they will become soggy), you can store the leftover guac in the fridge. First, add guacamole to an airtight container. Then cover in a thin, visible layer of lime juice or water. Press plastic wrap tightly onto the surface of guacamole to cover. Refrigerate safely up to 2-3 days.
  • Freeze – These guacamole bites won’t freeze well.

Guacamole Bites

Ingredients  

  • 1 bag Scoops tortilla chips Tostitos brand
  • 1 container cherry tomatoes sliced
  • 2 whole avocados pitted, halved
  • 1 jalapeno diced, seeds removed if you want it less spicy
  • ¼ cup greek yogurt
  • 1 lime squeezed
  • 3 tablespoons cilantro chopped
  • ¼ cup red onion diced
  • 1 tomato diced
  • salt to taste
  • pepper to taste

Instructions 

First, Make Fresh Guacamole

  • Dice jalapeño, cilantro, tomato and red onion and set aside.
  • Halve, pit and mush your avocados with a fork in a bowl.
  • Squeeze lime over the avocado and lightly mix.
  • Add Greek yogurt for a creamy added flavor.
  • Add diced ingredients to taste, leaving jalapeño seeds in if you really like it hot, or eliminating if not.
  • Add salt and pepper.

Now Create Your Individual Guacamole Bites

  • First, lay your Scoops out on a tray.
  •  Gently scoop desired amount of guacamole into each chip.
  • Top with a sliced cherry tomato for a colorful, flavorful finish!

    1. Hi! It’s best made no more than an hour in advance. Guacamole quickly browns and chips will eventually become soggy.
