    A few years ago, a few of my great friends & I ventured an hour outside of Kansas City for a day at the wineries. For the drive, my friend Kathryn packed her snack mix – it was so simple, but completely amazing. I couldn’t get my hand out of the bag. Thankfully, it was a short trip. Since, I’ve been mixing up her trail mix and have since made it into no bake cookies, because why not? The result was delish! As I continue with the 12 Days of Cookies, I’m sharing the recipe for my favorite no bake cookies.

    No Bake Trail Mix Cookies

    Course Dessert
    Prep Time 5 minutes
    Total Time 5 minutes
    Servings 2 dozen


    • 1 ¾ c butterscotch chips {package}
    • ¾ c peanut butter
    • 1 c peanuts
    • 1 c pretzel sticks
    • 1 c chex
    • 1 c marshmallows
    • 1 c peanut butter m&m’s
    • 1 c chocolate chips {optional}


    1. Line cookie sheets/platters with parchment paper {must fit in your refrigerator}
    2. In the microwave, combine butterscotch chips & peanut butter 30 seconds at a time until smooth, stirring intermittently.
    3. In a separate bowl, combine remaining ingredients. Stir in peanut butter mixture until well combined.
    4. Drop mixture by the spoonful onto cookie sheets & refrigerate until solid - about an hour or let set at room temperature.
    5. Optional - melt 1 c chocolate chips until smooth and drizzle on top.
