I’m finally sharing my No Bake Granola Bars recipe with you today that I’ve held onto the last couple weeks as I’ve tried to catch my breath. As the school year comes to a close, I’m feeling anxious for a lack of schedule. The morning rush, barely seeing my babes and feeling consumed with work.

This morning started with a text from Chris to break the news to me that one of the girls had played in my candle and there were oil stains all over our new marble. I took a deep breath and told him it was alright, we agreed we would embrace the imperfections. I walked downstairs to assess the damage and my heart sunk. There were 20’ish stains. I panicked, I turned to my Facebook fans for help and contacted our marble fabricators. I’m testing a few things out now and will let you know what I find! Anyways, it put me in a funk, but it also put life in perspective for me. I was worried about my marble when I have 3 little girls who are growing up all too quickly and I am focused on marble. A thing. A thing that will be here the same size, that doesn’t give or receive hugs, love, and smiles. Why?

The marble was intended to be a means for us to cook, mix and bake together. I look forward to getting back to the basics with my babes as summer begins. These No Bake Granola Bars will be the first thing we mix up because it’s safe and easy for them to make and we all love them!

We can’t get enough of these Peanut Butter Granola Bars – they’re so easy to make and I feel good about them, too! They are packed with protein which makes them a great breakfast treat before heading off to school.

We made these a couple weeks ago and within a couple days they had all been devoured. I won’t tell you how many I ate. These No Bake Granola Bars are incredible on their own, but who doesn’t love to play with food? You can add mix-ins or create a granola bar toppings bar when entertaining!

Are No Bake Granola Bars Gluten Free?

You can make these either way – I use regular oats, but you can use gluten free oats to make Gluten Free Granola Bars!

How to Store No Bake Granola Bars:

Store Peanut Butter Granola Bars refrigerated in an airtight container for up to one week.

How to Make No Bake Granola Bars:

Combine peanut butter and honey.  Warm and stir.

Combine oats and puffed rice. Stir in peanut butter honey mixture.

Scoop mixture into a lined baking dish and press. Refrigerate overnight.

No Bake Granola Bars

Learn how to make delicious no-bake granola bars in just 10 minutes with only 4 ingredients! These granola bars are the perfect make-ahead breakfast!

Ingredients

  • 1 1/2 c peanut butter
  • 3/4 c honey
  • 3 c old fashion oats
  • 1 1/2 c puffed rice {brown or white}

Instructions

  • Combine peanut butter and honey in a bowl. Warm for 30 seconds in the microwave and stir.
  • In a large mixing bowl, combine oats and puffed rice.
  • Stir in peanut butter honey mixture.
  • Line 9x9 baking dish with criss cross parchment paper for easy removal.
  • Scoop mixture in and firmly press using your spatula or a piece of parchment.
  • Refrigerate overnight.
