Every week, Isla and I have a date at Chipotle just before we pick the big girls up from school. During the holiday break, I was missing our little Chipotle dates. I crave their corn salsa both as a dip and on their chicken tacos!
Fortunately for me, I didn’t have to rely solely on taste to recreate the Chipotle Corn Salsa. All of the ingredients are listed directly on their website!
Truthfully, it was easy to perfect this recipe to get the measurements of each ingredient just right because I’ve eaten so much of it. I should probably be a little embarrassed about that, but I’m not!
In fact, my Chipotle Corn Salsa obsession is your gain! I’m not huge on copycat recipes but this is one to savor! It’s so simple and so amazing!
It’s the perfect medium salsa to enjoy as a dip or on all your favorite Mexican and Tex Mex recipes.

What’s in Chipotle Corn Salsa
- Jalapeños – Fresh jalapeños add a lot of heat to this delicious dip, topping or side dish. Slice in half to scoop out the membrane and seeds before dicing.
- Poblanos – Another delicious pepper to add a little heat to this salsa.
- Cilantro – I’m team cilantro, I love the flavor it adds but omit if you’re on the other team.
- Red Onion – Adds color and flavor. You can substitute white onion in a pinch.
- Corn – Fresh corn cut removed from the cobb provides the best flavor, but you can substitute canned corn if needed.
- Lime Juice – Fresh squeezed lime brings out the bright flavors. You can substitute 100% Real Lime Juice in a pinch.
- Lemon Juice – Again, fresh is best. If you don’t have any fresh lemons on hand you can substitute 100% Real Lemon Juice. A fresh squeeze of lemon juice enhances the flavors.
Chop chunky or fine – to your preference!

- Roasted – Use roasted corn and or poblano peppers to mix it up
- Black Beans – Throw in some black beans for a little protein.
- Avocado – Another great way to add in a little protein.

Chipotle uses white corn, but when it’s winter in Missouri, I use yellow because it’s what we have available.
Use fresh corn if possible, for the best results. You can substitute canned or frozen corn in a pinch.

How to Squeeze Lemons and Limes
- The easiest way to juice citrus is to start at room temperature.
- Roll the lemon or lime with the palm of your hand on a cutting board or countertop to soften it.
- Slice it in half lengthwise. Juice by hand squeezing it until all the juice is released, use a hand-held juicer or the citrus attachment on your mixer.
On average, 1 lime makes about 2 tablespoons juice, 1 lemon about 3 tablespoons of juice.

- Refrigerate – Store in an airtight container or covered in plastic wrap up to 5 days.

Ingredients
- 3 ears corn boiled and cut
- 1/4 cup cilantro chopped
- 1/4 cup red onion diced
- 1 jalapeño seeded and diced
- 1/2 poblano seeded and diced
- 1/4 lemon juiced, about 2 teaspoons
- 1/2 lime juiced, about 1 tablespoon

I love your recipes but on this one, I don’t understand. You said frozen corn was better than canned if fresh wasn’t an option. Yet in your recipe you list an amount for canned corn (1 can, no idea what size) but not a measure for frozen corn. Please help! Thank you
