Baked Brie Bites with Strawberries | Easy Appetizer Recipe

These Baked Brie Bites are a super simple appetizer that’s made with just 4 ingredients and they are ready to serve in less than 20 minutes. Brie is baked in phyllo shells and topped with sugary strawberries for an easy but crowd pleasing appetizer.

I love evenings at home with wine, cheese, fruits and crackers – especially when they’re melted together into fantastic little bites.

Spring and summer always remind me of snacking on the front porch with strawberries and sugar. I combined two of my favorite things to make strawberry brie bites, which are incredible hand held appetizers.

To Make Baked Brie Bites with Strawberries, You Will Need:

  • Phyllo Shells – By using ready made pastry shells, this appetizer comes together in no time at all.
  • Brie – I like to use triple cream brie as it’s so rich and creamy.
  • Strawberries and Sugar – Fresh strawberries are tossed in sugar and used to top the baked brie for a sweet flavor that cuts through the creaminess of the cheese.

How To Make Baked Brie Bites with Strawberries

  1. Preheat oven.
  2. Cube brie and fill shells.
  3. Toss strawberries in sugar and top phyllo shells.
  4. Bake and enjoy!

Top Tips To Make Baked Brie Bites with Strawberries

  • These appetizers only take around 8 minutes to bake, so keep an eye on them to make sure they don’t over cook.
  • As soon as they come out of the oven, top them with the sugar strawberries and serve immediately so that the cheese is melted.
  • If you like, you can place the cheese in the shells ahead of time and keep them covered at room temperature, then just pop them into a pre-heated oven when you are ready to serve them.

An Easy Last Minute Appetizer

I always have at least one package of phyllo shells in my freezer. If I’m really lucky, there may be ice cream in there too, but it’s an otherwise lonely place. 

Phyllo shells are great for last-minute entertaining. They can be used for breakfast/brunch, appetizers and desserts. Strawberry brie bites fall under all of the above!

What To Serve With Baked Brie Bites

This finger food appetizer can easily be served by itself, but I like to serve them with a platter of other quick and easy apps like my Guacamole Bites and Spinach Dip Bites.

You can also serve these alongside a fresh side salad to serve them as a sit down appetizer. They are also great for snacking by yourself!

Wine Pairing

These baked brie bites are perfect to serve if you are hosting a wine tasting party. Serve them to accompany a chardonnay, it’s acidity will cut through the creamy brie, and they will also work well with a Cabernet Franc.

  • 1 box phyllo shells
  • 1/4 round of brie
  • 1/2 package of strawberries sliced & quartered
  • 1/2 cup sugar

  • Slice & cube brie & fill shells.
