They are deliciously simple and present beautifully for parties. In fact, they are one of my favorite hand-held hors d’oeurves.

You can make these brie bites with petite little premade pastry shells for a bit of crunch, or bake them in a phyllo pastry cup with more of a fluffy rise. However you decide to make them, your guests are sure to adore them!

These little brie bites are one of our favorite appetizers and it’s easy to understand why. Easy to customize and beautiful to serve, they will be the hit of your display of delicious little bites at parties!

I love evenings at home with wine, fruits, cheese and crackers – especially when they’re melted together into fantastic little bites.

You can make these brie bites in two different ways, as you’ll see below. Create them with two different options for the premade dough cups or shells… either way, I think you’re going to love them! Let’s get started.

Shopping List

  • Phyllo Shells or Puff Pastry Bites – We like these boxes of six or these mini Phyllo shells that come in a box of 15.
  • Brie – I like to use triple cream brie as it’s so rich and creamy.
  • Filling – Jams, fruits, sugars, nuts and herbs, the options are endless.

How To Make

  1. Preheat oven according to package directions.
  2. Prep – Slice and cube brie.

  4. Bake – 8-10 minutes for the mini shells and 20 minutes for the puff pastry.

  • Try any of your favorite jams or jellies! These work beautifully with strawberry, raspberry, cranberry, orange, and so much more.
  • Top with a drizzle of honey, your favorite chopped nuts, fresh herbs or even fresh sliced fruits like strawberries, peaches and berries.

Tips

  • You can leave the brie rind on if you’d like, but this cheese melts better when cubed if it’s removed in this recipe!
  • These appetizers only take a few minutes to bake, so keep an eye on them to make sure they don’t over cook.
  • As soon as they come out of the oven, top them with any additional toppings and serve immediately so that the cheese is melted.
  • If you like, you can place the cheese in the shells ahead of time and keep them covered at room temperature, then just pop them into a pre-heated oven when you are ready to serve them.

Prep in advance and leave refrigerated for up to 24 hours prior to baking and serving.

How to Store

  • At Room Temperature – These baked brie bites can sit out at room temperature for up to two hours while serving, but are most delicious when warm right out of the oven.
  • Refrigerate – For up to 48 hours after baking.
  • Freeze – I don’t recommend freezing these brie bites after serving.

  • ½ cup fig jam or any flavor you'd like
