  • If you’d like, you may score these potatoes to help them soak up even more seasoning and flavor as they bake.

Score the potatoes by slicing them crossways several times, without slicing all the way through. Scoring can help them bake more evenly, as well as allowing the flavors to soak into the center of each bite.

Frequently Asked Questions

Does Parmesan cheese melt?

While parmesan can melt, it doesn’t always. Because it’s a dry, crumbly cheese, it soaks up the oil in these potatoes and creates a fabulously crispy crust.

Why do we score the potatoes?

Scoring the potatoes isn’t required, but it can allow the delicious flavors of the cheese and seasoning in this dish to soak into the creamy center of each potato.

    1. Hi Diane,
There are several oven safe glass brands, Pyrex being the most popular. This type of glass can be heated at much higher temperatures- far beyond 400 degrees, actually! I’ve never had a problem and have always used them safely in our oven.
      Hope that helps,
      Julie
