Quick breads are one of my favorite things to bake – even above cookies. You can whip up a loaf or 6 in just 5 minutes hands-on time (and it doubles as potpourri). As quick bread bakes, it fills your home with the most beautiful aroma, building excitement to remove it from the oven.
This no yeast bread is the best way to get the taste of old-fashioned homemade bread, without out all the time and hassle. I would love to have the time and energy to make yeast bread all the time, but sometimes the easier route is just as satisfying. That’s definitely the truth in this situation.
I recently adapted my sweet bread recipe to make brown sugar bread and it’s simply delicious!
The brown sugar makes bread extra moist because of molasses in it. It gives this bread a deeper color and flavor as well. It’s out of this world delicious alone or smothered with a little butter.

Brown Sugar Bread – The Perfect Treat
Brown Sugar Bread makes a delicious breakfast snack or dessert. Serve it warm immediately after removing it from the oven or later in the week! It’s a homemade treat that tastes and feels special.
I tend to make quick bread in these miniature loaves enjoying one and gifting or freezing remaining loaves.

Brown Sugar Bread and any variation of this no yeast bread makes the perfect housewarming, hostess, holiday and neighbor gift as well. Simply bake it in miniature loaf pans.
You can find these miniature loaf pans for less than $2 at Michaels, but you can also use disposable.
Tied with a ribbon, wrapped in parchment, or a kitchen towel, they make a beautiful gift. I hope they make your day a little sweeter, too. Enjoy!
The Basics of a Bread Recipes Without Yeast
A quick bread is a bread without yeast. In this easy recipe we use baking powder. Omitting yeast makes it quick and easy, hence the name! Many breads, muffins, biscuits and scones are considered quick breads.
No yeast bread is typically made with just a few staple ingredients and takes less than 5 minutes hands on time!
Flour
Flour is the primary ingredient for all no yeast breads. When combined with liquid (milk and vegetable oil), it provides the structure which prevents it from falling. When baked, it expands, trapping the gases from the leavening agent (baking powder).
This results in a moist, light and airy loaf that you’ll crave again and again!
This recipe calls for all purpose flour, but you can substitute self rising flour omit the baking powder and salt. Self rising flour is a blend of all purpose flour, baking powder and salt.
Baking Powder
Baking powder is a dry chemical leavening agent. It’s a mixture of an acid (sodium bicarbonate) and cream of tartar which increases the volume of quick breads and provides a light texture.
It releases gas in the batter causing bubbles which create the rise. This ingredient is essential for a bread recipe with no yeast.
Salt
A touch of salt goes a long way in baking recipes. It strengthens the gluten protein structure in addition to adding a hint of flavor. It enhances the flavor of all ingredients and therefore is the only seasoning required in this delicious recipe.
Milk
Milk adds to the moisture and activates the gluten. You can also use buttermilk if you prefer! Learn how to make buttermilk here. Dairy free? Use your favorite dairy substitute. Almond milk works incredibly well. You can use anything from skim milk to vitamin d!
Oil
Liquid fat makes the bread moist. I use vegetable oil, but canola oil or melted butter also work well.
Eggs
Eggs bind the ingredients and also help leaven the bread.
Variations for this No Yeast Bread
This bread is incredible as is because of the rich molasses, but you can mix up this recipe in so many ways! Some suggestions include:Extracts – add a hint of vanilla, almond, banana or maple, the options are endless. Simply add 2 teaspoons of your favorite extract.
- Nuts – fold in walnuts, pecans or almonds or use them to garnish the bread just before placing it in the oven.
- Fruits – you can add in banana slices, apples or dried fruits, even raisins to your mixture as well.
- Spices – Blend in a tablespoon of cinnamon or combine cinnamon with 2/3 cups sugar and swirl it in.
- Chocolate – white or milk chocolate chips are also a delicious addition.
- Oats – fold them in and sprinkle on top for added texture.
- Glaze – add a cream cheese glaze, apple glaze or classic glaze.
How to Make Bread Without Yeast
The concept is the same for all breads made without yeast (see below for more easy no yeast bread recipes). It’s a no fuss, no muss way to make homemade bread. There’s no yeast and therefore no wait!
No yeast bread is typically made by combining dry ingredients, followed by wet ingredients and gradually folding the dry mixture into the wet mixture for an even rise.
- Combine dry ingredients.
- Combine wet ingredients.
- Gradually incorporate dry into wet.
- Pour into greased loaf pan.
- Bake bread (this recipe takes about 40 minutes bake time).
Tips
- Don’t overfill your loaf pan. Allow room to compensate for rise.
- Use the toothpick test to ensure it’s ready. Bake time varies based on your loaf pan size and material, altitude and even oven temperatures can vary. Insert a toothpick into the center. When it comes out clean it is done.
Baking Alternatives
- Large Loaves – You can also make this in 2 – 1 pound loaf pans or cut the recipe in half for just 1 loaf pan and bake 50-60 minutes.
- Make Muffins – If you prefer to make them into Strawberry muffins, just grease miniature muffin tins and fill each to 2/3 full. Bake 12 minutes.
- Make it Ornate – Alternatively, you can also bake it in an ornate loaf pan with the same minimal effort!
To Store
- Room Temperature – Store no yeast bread in a sealed plastic bag or covered in saran wrap at room temperature for up to 5 days.
- Refrigerate – Up to 1 week in an airtight container.
- Freeze – Wrap them tightly in heavy foil, saran wrap or place them in freezer bags (I like to do at least 2 to prevent freezer odors from seeping in), and freeze for up to 3 months. Bring to room temperature to serve.

Brown Sugar No Yeast Bread
Ingredients
- 2 cups brown sugar
- 4 cups all purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 eggs
- 2 cups milk
- ⅔ cup vegetable oil
Instructions
- Grease 6 miniature loaf pans and preheat oven to 350°F.
- In a medium mixing bowl, combine brown sugar, flour, baking powder and salt. Set aside.
- In a large mixing bowl, beat eggs, milk and oil.

- Pour batter into pans an inch below to compensate for rise. Optional: sprinkle sugar on top.

Easy to prepare and was delicious! I made one loaf and 6 small loaves. I added 1T of cinnamon and some chopped pecans. Will definitely make this again.
This bread baked into a pretty loaf but I found it to be dry. I added cinnamon and nuts and glad I did, without them this bread wouldn’t have had any flavor at all. All in all I was disappointed and probably won’t make it again.
It sounds like it was over baked. It’s very moist. I recommend reducing bake time and using the toothpick test.
You never say what size loaf pan. Do I use a 9×5″ pan? I also read that the bread gets it’s flavor from the molasses. There’s no molasses mentioned. This is the 2nd recipe of yours I made. It was super simple and the flavoring turned out great. Your notes on sprinkling sugar on top really made all the difference. My bread loaf tins were kind of small so I had way more batter left so I used my mini bundt pans to make 3 of those with sugar topping, bananas and chocolate chips and a large bread/cake with bananas. This is another recipe of yours I will make again. Huge hit in the house!!

Made this today and the very center of it fell in. I’m not sure what the problem was. The rest of it was fine, and it tasted good. Don’t know what went wrong.
I’m sorry to hear that. It sounds like one of two issues. First possible issue is underbaking – Loaf pan size and material effect bake time as well as altitude. In addition, some oven temperatures are wrong – you can use a thermometer in your oven to ensure it’s accurate. To prevent underbaking, you can use the toothpick test. When a toothpick inserted into the center comes out clean, it’s done!
Second possible issue is that the baking powder is expired. Check the date before baking with it. I’ve fallen victim to this one a time or two. Hope that helps!
I made this but honestly it just tasted like a cake nothing like a bread. Disappointed for dinner but would be good as cake not bread.
It is intended for breakfast and snack, much like muffins or banana bread as the name “sugar” indicates. If you’re looking for something savory, try beer bread or artisan bread.

It is a sweet bread, rather than a traditional bread. Kind of like a muffin, in bread form.
I made changes due to being vegan and due to not having the right ingredients- I used flax seeds and water instead of eggs, coconut sugar instead of brown sugar, rapeseed oil instead of vegetable oil and wholemeal four instead of all-purpose flour. Also added almond oil. It was lovely and moist. Really happy with my first sweet bread!

Omg!!! I just made the brown sugar bread & it is absolutely delicious!!!! It’s light & reminds me of a cross between bread & (cake) for lack of a better word. I didn’t have the correct size pan— not even close!!! I actually cut the recipe to 1/4 , because my supplies are limited & I wasn’t sure how it would turn out; given the fact that my pan was an 8×8 square. I added cinnamon & pumpkin pie spice. I’m afraid I’m going to eat the entire bread!!! Thank you so much for a fabulous recipe!!! I made the original recipe, awesome and easy. I just made another one used a box of vanilla pudding and sprinkled cinnamon in dry ingredients and then sprinkled on top. Had to bake it about 1 hr I use a Bundt pan. Presentation is beautiful wish I could post a picture .

This is the best!!! I live in the Caribbean during coronavirus. We are on lock down for another 2 weeks. To shop at the grocery store plan on standing in line out in the hot sun for 10-12 hrs. And not finding everything you need when you are finally allowed in. Particularly bread products I make my husband toasted English muffin or bagel whatever I can find . Nothing now so found this recipe as no yeast. Baked it in a Bundt pan exactly as recipe called but 50 min. Came out PERFECT. THIS IS A KEEPER. it also looks great coming out of Bundt pan . Next time I will add cinnamon . Will slice toast add some peanut butter. But it’s great by itself . Awesome recipe simple easy .

I never usually bake- and lately I’ve been dying to. But I have no yeast in the pantry and with this shelter in place for the last couple of weeks… and yeast being one of the ingredients to fly off the shelves in grocery stores. I haven’t tested it, but you should be able to eliminating salt and baking powder.
I cut the brown sugar in half, used gluten free flour, and added 2 tsp. of cinnamon. Sprinkled the tops with sugar. So good.

This recipe was so simple to make and when it was complete, I ate a piece while it was warm! Simply devine! I cut the recipe in half. I think the next time I make it, I would like to cut the sugar content down to 1/2 cup.

I tried your recipe but it is so sweet, i prepared another one but i used only 1 cup of sugar and add 1/2 tsp.baking soda thinking it will help from rising and it came out
a little softer. I reduced the sugar because of my mother who is pre-diabetic. I hope that whatever revision i made it will be ok to you.

I only have one loaf pan, as I’m new to baking. Can the other half sit aside while the first bakes or should I definitely just do half a recipe?

I’m sure it can, though I haven’t tested in a bread maker.
Maybe it was just me, but when I made it, it tasted quite floury. Other than that though, it was pretty good.
Try sifting the flour next time. When you scoop, it can become backed adding more flour.

Can you use EVOO instead of veg oil?
Yes, but it will change the flavor. Canola is the next best thing to vegetable oil for this recipe. You could also substitute butter. Enjoy!

I cut the amount of ingredients in half and baked for 50 mins as you suggested but the inside is still partially uncooked! Also it is not holding together as I would expect a loaf of bread should! What went wrong?
I am giving it 4 stars because of this but it smells great! And my wife tasted a piece that fell off and liked it.
Bake time varies between oven and baking dish, so always use the toothpick test. Allow to cool before slicing. Unlike pound cake, this bread has a soft texture and delicate crumb.
It tastes amazing but the texture was a lot more like cake than bread. What did I do wrong?

I recommend canola oil, but you can use olive oil. It will change the flavor.
This bread is so good! I did have some modifications! I didn’t have enough milk so I used 1/2 cup of milk and 1 1/2 cups of heavy cream. Also, I did not want to use vegetable oil so I cut 2/3 cup of butter and melted it. It was fabulous!

What setting should I use for microwave convection mode when cutting this recope in half ? 180 degree celcius for 50bminutes ? Can I just replace brown sugar with white sugar without changing anything else ? And what to do if I do not want to use eggs ? Thanks.
Do you think this could be baked in an iron skillet, like old fashioned Appalachian Sweet Bread? My grandmother used to make what she called “Sweet Bread” in an iron skillet. It wasn’t quite as sweet as cake, but it was cake-like, which this recipe seems to be. Either way, this recipe is going on my list of “must try this!” recipes, along with your original Sweet Bread recipe.

I’m not sure what size your particular loaf pan is, but you can make 2 – 1 pound loaf pans or cut the recipe in half for just 1 loaf pan and bake 50 minutes or until it passes the toothpick test.

Two regular loaf pans, 50 minutes, came out delicious but more like a cake than a bread. Any suggestions for next time to make it more bread like?
I made this yesterday, and it was absolutely delicious! I added dried cranberries and some honey roasted pecans I had in the pantry. The whole house smelled like Autumn.

OMG this is a very good recipe and it couldn’t be easier, I added 1c. of organic rolled oats and a teaspoon of vanilla extract a dash of cinnamon and used almond milk instead of regular milk next time I’ll add chopped pecans too

This is so simple that I didn’t believe it. So, I made it. OMG it’s simple and delicious! I’ve made it twice in one week! It comes out of the oven and just flies out of the pan. I make it in a (5lb) ceramic roast pan. It takes 20 minutes longer but, well worth the wait!

What were the measurements of your pan, I have 8in X 3 3/4 X 2 1/2. Is that small enough?

Last week, I did the plain sugar quick bread (I was out of brown sugar )-: ) and did a lemon glaze. Perfect. Today I added a layer of brown sugar and cinnamon to the middle and top of each loaf of the brown sugar version. Perfect for fall! Thanks for coming up with this!
