After struggling with my weight for the last few years, I started working with a personal trainer. During our first meeting, he reviewed my daily food diary and  quickly came to the conclusion that I wasn’t taking in enough protein. I never really thought about it – I knew I was eating healthy, but didn’t realize that I while my day was packed with fruits and veggies, I was consuming an insufficient amount of protein.

I’m a very habitual eater and consistently eat the same things, with an indulgence here or there, like pancakes. I’ve been working to integrate more protein into my diet and everyday recipes and growing more conscious of it for our entire family as well. These pancakes are a protein rich breakfast.

To Make These Chocolate Protein Pancakes, You Will Need:

You need just 4 ingredients to make this breakfast!

  • Eggs: Free run / organic if possible
  • Flour: All purpose
  • Baking Powder
  • Fairlife Chocolate Milk

How to Make Chocolate Protein Pancakes

It’s so easy to make a batch of these pancakes fro breakfast!

  1. Separate eggs, setting yolks aside. In a mixing bowl, beat egg whites until stiff.
  2. Add flour, baking powder, egg yolks and fairlife chocolate milk.
  3. Mix until just combined and allow to rest for 15 minutes.
  4. Warm a griddle to medium heat. Pour mixture and cook until the batter begins to bubble. Flip and cook until slightly brown.

The last couple weeks I’ve been dropping Adalyn off at school rather than putting her on the bus, giving us an additional 40 minutes each morning. We’ve been enjoying our extra time together snuggling, reading books and of course she sneaks in a few special requests, like pancakes.  I’m so thankful for a little additional time with her and the opportunity to make the occasional breakfast together.

Chocolate Pancakes With Added Protein

To make this special treat a little healthier, I make my pancakes with fairlife milk, which reduces the sugar and adds protein, thus creating Protein Pancakes.  For a truly special treat {that I can feel good about} I surprise the girls with chocolate Protein Pancakes, which are always a hit!

Fluffy Protein Pancake Recipe

Because of the higher protein, it holds structure together, creating fluffier pancakes, but of course I use a couple other tricks for thick, delicious pancakes that make my family beg for more:

  • I like to separate the eggs, beating egg whites until they’re stiff, then gently folding in remaining ingredients.
  • The next tip for fluffy pancakes is to not over mix.
  • Finally, I let the batter rest for 15 minutes cooking. The result is light and fluffy Protein Pancakes, every time.

How Much Protein is in Protein Pancakes?

This recipe has 10 grams of protein per serving while just 4 grams of sugar and yields lots of smiling faces and I can send Adalyn to school knowing that she’s getting the nutrients she needs for a great day!

Since they’re so flavorful, we just drizzle a touch a maple syrup. You can also serve them with fresh fruit and a little whipped cream.

Top Tips to Make Chocolate Protein Pancakes

  • Do not over mix the pancake batter and let it sit for 15 minutes before cooking it.
  • Warm the griddle before adding the batter.
  • Flip the pancakes when the batter starts to bubble.
  • Serve immediately.
