Ingredients for Simple Rocky Road Candy

  • Chocolate Chips – Use your favorite or whatever you have on hand. Milk, semi-sweet and dark will all work with this candy recipe.
  • Nuts – Salted peanuts are traditional. But fell free to experiment and try walnuts, almonds, or pecans.
  • Marshmallows – These are key to that classic rocky road texture and flavor.

Variations on Rocky Road Candy

Peanut Butter – Add a tablespoon of peanut butter while melting the chocolate to punch up that peanut flavor.

White Chocolate – Melt a few white chocolate chips using the same microwave method and drizzle on top once they are set.

Rocky Road Candy Recipe

This no-bake rocky road candy is the perfect blend of chocolate, marshmallows, and nuts, making it a delectable, quick treat.

Ingredients  

  • 2 cups chocolate chips, milk, semi-sweet, or dark
  • 1 cup salted peanuts
  • 1 cup marshmallows

Instructions 

  • In a large microwave safe bow, melt chocolate in the microwave in 30 second increments as chocolate melts to 15 second intervals. Stir until melted and smooth, approximately 2-3 minutes.

  • Stir in peanuts until well combined. Fold in marshmallows.

  • Using a teaspoon, scoop mixture and drop onto parchment paper. Use a second teaspoon to help release if needed. Allow to cool until set. Store in an airtight container in layers with parchment in between in the refrigerator.

Storage:
Rocky road candy can be refrigerated in an airtight container for up to 1 month. 
You can also freeze these little treats for up to 3 months, again in parchment paper lined layers in an airtight container. Just make sure you allow time to thaw before serving.
