Ingredients for Simple Rocky Road Candy
- Chocolate Chips – Use your favorite or whatever you have on hand. Milk, semi-sweet and dark will all work with this candy recipe.
- Nuts – Salted peanuts are traditional. But fell free to experiment and try walnuts, almonds, or pecans.
- Marshmallows – These are key to that classic rocky road texture and flavor.
Variations on Rocky Road Candy
Peanut Butter – Add a tablespoon of peanut butter while melting the chocolate to punch up that peanut flavor.
White Chocolate – Melt a few white chocolate chips using the same microwave method and drizzle on top once they are set.
Sprinkles – Use sprinkles to make these perfect for whatever you are celebrating — even if it’s just Tuesday!

Rocky Road Candy Recipe
Ingredients
- 2 cups chocolate chips, milk, semi-sweet, or dark
- 1 cup salted peanuts
- 1 cup marshmallows
Instructions
- In a large microwave safe bow, melt chocolate in the microwave in 30 second increments as chocolate melts to 15 second intervals. Stir until melted and smooth, approximately 2-3 minutes.2 cups chocolate chips, milk, semi-sweet, or dark
- Stir in peanuts until well combined. Fold in marshmallows.1 cup salted peanuts, 1 cup marshmallows
- Using a teaspoon, scoop mixture and drop onto parchment paper. Use a second teaspoon to help release if needed. Allow to cool until set. Store in an airtight container in layers with parchment in between in the refrigerator.
