In a large microwave safe bow, melt chocolate in the microwave in 30 second increments as chocolate melts to 15 second intervals. Stir until melted and smooth, approximately 2-3 minutes.
2 cups chocolate chips, milk, semi-sweet, or dark
Stir in peanuts until well combined. Fold in marshmallows.
1 cup salted peanuts, 1 cup marshmallows
Using a teaspoon, scoop mixture and drop onto parchment paper. Use a second teaspoon to help release if needed. Allow to cool until set. Store in an airtight container in layers with parchment in between in the refrigerator.
Notes
Storage: Rocky road candy can be refrigerated in an airtight container for up to 1 month. You can also freeze these little treats for up to 3 months, again in parchment paper lined layers in an airtight container. Just make sure you allow time to thaw before serving.
