Summer Cream Sauce Recipe

In the summer, I like to lighten things up a little, but that doesn’t mean that I don’t crave a cream sauce on my pasta!  I love a good carbonara or alfredo sauce.  Chris used to prefer a red sauce, until he had this lighter version.  It’s great to toss in bacon and peas, peppers, mushrooms or just as is.  Another reason I love it in the summer is it’s quick!  Who wants to spend all of their time in the kitchen when it’s beautiful outside?
1 lb spaghetti, linguini or fettuccine
20-24 ounces fat free half and half or vitamin D milk
1/4 c butter
Add in’s: broccoli, mushrooms, peppers, bacon or peas pre-sauted
1 Tbsp pepper
1 tsp salt
3/4 c fresh grated parmesan {don’t even try the store-bought stuff}
Combine cream, butter salt and pepper in a sauce pan over medium heat for 3-5 minutes.  Put in your add in’s of choice.  As shown, bacon and mushrooms.  When cream sauce boils, add cooked and drained noodles to the sauce.  Reduce over medium heat until sauce thickens and clings to noodles.  Remove from heat and toss in fresh parmesan.
