A few years ago, a few of my great friends and I ventured an hour outside of Kansas City for a day at the wineries. For the drive, my friend Kathryn packed her snack mix – it was so simple, but completely amazing. I couldn’t get my hand out of the bag. Thankfully, it was a short trip.
I’ve been mixing up her trail mix at home, and have since made it into no bake cookies, because why not? The result was delish! As I continue with the 12 Days of Cookies, I’m sharing the recipe for my favorite no bake cookies.

These cookies are the perfect mix of sweet and salty with the combination of butterscotch, pretzels and peanut butter. It takes just 5 minutes to make a large bath. The hardest part is being patient and letting them set!

Easy No Bake Cookie Ingredients

- Butterscotch Chips – The butterscotch chips and a wonderful creamy sweetness to these cookies.
- Peanut Butter – Smooth or crunchy works in this recipe, but it’s best not to use a natural peanut butter. However, you’re welcome to try your hand at homemade peanut butter any time – learn how to make peanut butter here.
- Peanuts, Pretzel sticks and Chex – These snacks add a salty edge to these cookies as well as a crunchy texture
- Marshmallows
- M&Ms – The peanut butter ones are best, but you can use plain if you prefer.
- Chocolate Chips – Optional, but the chocolate drizzle is advised!
How to Make Easy No Bake Cookies
No oven needed for these cookies!
- Line cookie sheets/platters with parchment paper {must fit in your refrigerator}
- In the microwave, combine butterscotch chips and peanut butter 30 seconds at a time until smooth, stirring intermittently.
- In a separate bowl, combine remaining ingredients. Stir in peanut butter mixture until well combined.
- Drop mixture by the spoonful onto cookie sheets and refrigerate until solid – about an hour or let set at room temperature.
- Optional – melt 1 c chocolate chips until smooth and drizzle on top.
How Long Does It Take For Easy No Bake Cookies To Set?
These cookies will firm up in around an hour in the fridge. They will also set if you leave them at room temperature, although it may take a little while longer. They’re a great go to when you don’t have time to watch cookies bake in the oven, just whip up a batch and pop them on the side to enjoy later in the day.
Top Tips To Make This Recipe
- Line your cookie sheets with parchment to ensure easy removal.
- If you don’t have a microwave, you can also melt the butterscotch on the stovetop.
- Be sure to let the cookies fully set before serving.
- Store in an airtight container in the fridge and they will keep for several days. Separate the layers of cookies with parchment paper, so if they melt they won’t stick together.
