My mom had a recipe box full of quick & easy summer desserts. My sister, Cheryl, recently shared one of her favorites with me. It’s so incredibly easy & refreshing after a hot summer day. I mixed it up a little & made individual servings with a brown sugar graham cracker crust. The crust was so good, that I was one short :). Cheryl & I are not sure what mom called these {it was omitted from her recipe}, but I think Lemon Berry Pie suits them perfectly!

With just 3 ingredients & 1 step {with a pre-made graham cracker crust}, you can see why we love them as much as mom did!

Helpful hint: one sleeve of graham crackers generally yields a cup crushed.

Serves 18



  1. Preheat oven to 325 degrees.
  2. Combine crushed crackers, sugar & butter. Spoon a tablespoon into each cupcake liners & press.
  3. Bake 5 minutes.
  4. Combine filling ingredients & spoon into crust. Top with your favorite fruits.
  5. Refrigerate.
