Making a grilled cheese in a pie iron brings an extra layer of crispy goodness on the outside while sealing all gooey cheese inside. It’s pure textural bliss! All you need to make a campfire cheese sandwich is bread, butter, your choice of cheese, and a pie iron.

What is a Pie Iron?

A pie iron – sometimes called a campfire sandwich maker – is a clamshell shaped cooking utensil that perfectly toasts your sandwich over an open flame.

Campfire grilled cheese sandwiches are a delicious way to heighten your outdoor experience, whether you are on a camping trip or hanging with your family over a backyard bonfire. These sandwiches are not only simple and yummy, using the pie iron also makes them portable.

I take grilled cheese seriously! You can mix it up and make any of my favorite grilled cheese sandwiches over the campfire, including Pimento Grilled Cheese, Mayo Grilled Cheese, Gourmet Grilled Cheese, and Grilled Ham and Cheese!

Tips from my Test Kitchen

Use good melting cheese: I suggest using American, Cheddar, White Cheddar, Swiss or Gruyere, but feel free to use your favorite.

Campfire Grilled Cheese

A campfire grilled cheese takes all the comfort of the childhood favorite and puts it into a small, handheld sandwich. The normal ingredients – bread, butter, and cheese – are cooked over an open flame in a pie iron to create a crispy, delectable treat.

Ingredients  

  • 1 teaspoon butter
  • 2 slices bread
  • 2 slices cheese Your choice: American, Cheddar, Swiss, White Cheddar, or Gruyere

Instructions 

  • Open pie iron.
    Hands place a slice of bread into a cast iron sandwich press on a white surface, ready to create the perfect campfire grilled cheese.
  • Spread butter on one side of a slice of bread and place butter side down in pie iron. Add 2 slices of cheese. Butter the other slice of bread and place on top, butter side up.
    Close the pie maker and lock. Trim excess bread using a butter knife or your hands.
    1 teaspoon butter, 2 slices bread, 2 slices cheese

  • Close over fire for 2+ minutes. Rotate and place over fire for another 2+ minutes. Carefully open the pie iron an inch or more to check desired doneness.
    Once it is golden brown, remove from heat. Open one side of the pie iron and gently turn out onto a plate to cool. Campfire grilled cheese can be enjoyed handheld or with utensils.

Julie’s Tips

Total cooking time will depend on the heat of the fire. When it is golden brown, it is done.
If you are using a square pie iron, Bunny Bread is larger than most sandwich bread and square in shape, for the best coverage.
Round pie irons are best when using smaller bread.
