One of my favorite fruits of summer is strawberries! I remember eating them as a child on our front porch, dipping each bite in sugar and the smaller the strawberry, the better the strawberry to sugar ratio. My thinking hasn’t changed much, as you can see I made individual portions of strawberry pie.

My love for making pie began in the weeks I would spend with my grandma in the country. There wasn’t a lot to do, so we’d take a day and make several pies to gift, freeze and enjoy.

Her philosophy was “you can never have too many pies.” If she was invited to dinner on a whim, she could still come prepared, despite being an hour away from a grocery store. You can easily freeze this pie in the miniature portion for an individualized treat all summer long!

These little pies are also a great option if you’re in charge of bringing desserts to this year’s 4th of July party. Make a couple batches with different berries to cater to every preference and these are sure to be a hit!

This fresh pie filling comes together so quickly and easily, and the pies can be served warm or cold, so they are a great dessert to serve a crowd. Make them ahead of time, freeze them, bake them, they are just so versatile!

Strawberry Pie Ingredients

  • Strawberries – Use the freshest and ripest strawberries you can for the best flavor.
  • Sugar – White granulated sugar.
  • Lemon Juice – To sweeten the strawberries and add some freshness and tartness to them.
  • Cornstarch – To help thicken the strawberry pie filling.
  • Vanilla – You can make your own or use store bought.

How To Make Strawberry Pie

  1. Make Strawberry Filling – In a small saucepan, slice and mash strawberries, getting as much juice out of them as possible. Add sugar. Bring to a boil, then reduce to a simmer for 4 minutes.
  2. Strain Filling – Strain juice, removing the pulp, using a spoon to press as much juice as possible. Return juice to heat, discarding pulp.
  3. Thicken Filling – Whisk in cornstarch, lemon juice, vanilla and salt. Stir well. Bring to a boil, stirring continuously until thick (about 4 minutes).
  4. Add Strawberries – Remove from heat and stir in strawberries.
  5. Fill Crust – Add to pre-made pie crust. Start with a pre-made pie crust or get the details to make your own mini pies here.

Tips

  • This recipe can be used with your favorite berries for different pie fillings, blueberries, raspberries and blackberries all work well.
  • Be sure to strain the strawberries well using a fine mesh sieve.
  • Serve with vanilla ice cream or whipped cream.

Strawberry Pie

Ingredients  

  • 5 cups strawberries sliced
  • water
  • 3/4 cup white granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • salt pinch

    The flavor of this pie is awesome! I paired it with a graham cracker crust. I did not throw away the mashed strawberry, but I used it like a jam on the bottom of the pie before putting the filling in the pie. I will make this again!
