Strawberry Pie
Fresh Strawberry Pie Recipe - a sweet treat perfect for the Fourth of July! Make as whole strawberry pie or mini pies that are great for picnics.

Ingredients
5
cups
strawberries
sliced
water
3/4
cup
white granulated sugar
3
tablespoons
cornstarch
1
tablespoon
lemon juice
1
teaspoon
vanilla extract
salt

Instructions
In a small saucepan, slice and mash 1 cup of strawberries, getting as much juice out of them as possible.
Add sugar.
Bring to a boil over medium heat. Reduce to a simmer for 4 minutes.
Strain juice, removing the pulp, using a spoon to press as much juice as possible. Return juice to heat, discarding pulp.
Whisk in cornstarch, lemon juice, vanilla and salt. Stir well. Bring to a boil, stirring continuously until thick (about 4 minutes).
Remove from heat and stir in strawberries. Add to pre-made pie crust.
Notes
This recipe can be used with your favorite berries for different pie fillings, blueberries, raspberries and blackberries all work well.
Be sure to strain the strawberries well using a fine mesh sieve.
Serve with vanilla ice cream or whipped cream.
