A mojito is one of my absolute favorite cocktails. It’s the quintessential summer drink. I was instantly hooked on mojitos after my first trip to Mexico. Since, I realized that not all mojitos are created equal.

Watermelon Mojitos are best made fresh, without a mix. Like all good things, a Watermelon Mojito requires just a few simple ingredients, yielding the most amazing summer flavor.

What is in a Watermelon Mojito?

A mojito is typically made with mint, sparkling water, rum, simple syrup and lime juice. This Watermelon Mojito recipe offers a simple twist that’s full of summer flavor!

  • pureed watermelon or juice
  • sparkling water or club soda
  • mint leaves
  • simple syrup (aka as mojito syrup)
  • rum
  • optional: freshly squeezed lime juice

The combination of juice and rum is irresistible! It’s perfect for Cinco de Mayo parties, barbecues, poolside or a day on the water. A watermelon rum cocktail is just what summer ordered!

By summer, mint is growing abundantly in our garden. I incorporate it into some of our favorite dishes like this Cherry Tomato Pasta, but especially enjoy it in summer cocktails. Mint adds so much flavor and makes a beautiful garnish as well.

Mojitos are best with white rum. The below is an array of white rum that blend well with watermelon juice and make the best Watermelon Mojitos!

How to Make a Watermelon Mojito

  1. Prep – In a food processor, purée watermelon. Remove any seeds with fine mesh sieve. Set aside. Fill glass with crushed ice.
  2. MuddleMuddle mint in the bottom of a glass with a muddler or the back of a wooden spoon.
  3. Combine – Add puréed watermelon, white rum, sparkling water and simple syrup. Stir to combine.
  4. Garnish – Garnish with mint and watermelon wedge.

Do You Need a Mojito Muddler?

No, but I highly recommend one! A muddler is just $5 and great for making mojitos, guacamole and so much more! Plus, it makes you look like a skilled bartender. However, you can use any kitchen tool to mash the mint and release the flavor. The back of a wooden spoon makes a great alternative.

How to Make a Watermelon Mojito Mocktail Without Alcohol

You can make a watermelon mojito without alcohol and still have the same amazing flavor you crave! A virgin mojito is just as good as the real thing.

To make a mojito mocktail, substitute rum with white grape juice, pineapple juice, apple juice or apple cider. Follow the recipe in the printable recipe card below!

You can also simply omit the rum and add more club soda or sparkling water and simple syrup to taste.

Make it Frozen

Yes, you can make it frozen! Just add ice to the watermelon puree in your food processor. Blend with rum and simple sugar and pour over mint.

  • 16 chunks of seedless watermelon
  • Mint
  • Ice
  • 1 cup simple syrup
  • 1 ½ cups white rum
  • 4 cups club soda or sparkling water

Make it Skinny

To make it skinny, simply eliminate club soda and simple syrup and use Sprite Zero! It’s so amazing you won’t miss any flavor, I promise!

You can make these ahead, too! Watermelon purée can be stored in an airtight container refrigerated for up to two days and simple syrup can be refrigerated for months!

Ingredients  

  • 2 square chunks seedless watermelon (enough for ½ cup of puree)
  • mint sprig
  • ice crushed or cubed
  • 1 ounce simple syrup
  • ounces white rum
  • ½ cup club soda or sparkling water

Instructions 

  • In a food processor, puree watermelon. Remove any seeds with fine mesh sieve. Set aside.
  • Muddle watermelon and lower leaves from sprig of mint {reserving others to garnish}.
  • Add crushed ice. 
  • Add 1 oz simple syrup or 2 tablespoons sugar, rum and club soda.
