Really, is there anything better? I can eat green beans in shallot butter like they’re candy, and to those who knew me growing up, that would be a shock. Fresh green beans are not only easy to prepare, but they’re so pretty.

I love a plate with presence. You know, the kind at a restaurant that has others looking over like “I’ll have what she’s having”. Well I’ll have green beans in shallot butter any day of the week, especially since it’s one of the few veggies I crave.

To Make This Green Bean Side Dish You Will Need:

Just a handful of simple ingredients to make a restaurant quality side dish!

  • Green beans: fresh and organic if possible.
  • Butter: salted.
  • Shallot
  • Black pepper: freshly cracked

How to Make Green Beans with Shallot Butter

Place clean green beans in a saucepan and cover with 1 c water. Bring to a boil over medium heat {about 5 minutes}.

Pour the cooked green beans over a strainer filled with ice.

Meanwhile, melt butter and sauté shallot. Return green beans to the pan, toss and serve.

How To Trim Green Beans

I use kitchen scissors to quickly trim green beans, it’s far better than snapping green beans like I did with my Grandma for so many years, though I wouldn’t change that time with her for anything. I line up the stemmed edge in a bunch to trim them at once.

The smaller tip of the bean is personal preference whether you like to trim it or not, I do it to keep it consistent  for aesthetics. You know, because everyone judges the green beans before you eat them. I might be a little more type A than I previously thought.

Can You Make This Side Dish Ahead Of Time?

You can obviously trim the beans ahead of time, so that if they are part of a larger feast you can get ahead of yourself. You can also boil the beans slightly ahead of time and keep them to one side, then just sauté them just before serving. If you do this, be sure to pour them over the ice as this will help them to stay a vibrant green.
