I’ve always been a huge fan of pasta, so 8 years ago I took a leap of faith and splurged on a pasta press attachment for my KitchenAid Mixer. At the time, we didn’t have a lot of expendable income and it felt like a huge risk that could just consume space in our tiny kitchen, but I knew a hand crank pasta machine almost certainly would.

It turns out that it is one of my favorite and most frequently used kitchen tools. Homemade egg noodles are so versatile and easy to make. Through the years, we’ve made homemade pasta weekly, saying goodbye to store-bought noodles {that take nearly as long to make} in favor of delicious homemade egg noodles.

Egg noodles work well with an array of sauces. They make the perfect base for bolognese, beef stroganoff, Braised Beef Ragu with PappardelleSpaghetti with Mizithra CheeseBasil Lemon Pasta, chicken noodle soup and so much more!

Homemade egg noodles offer so much more flavor and an irresistible texture that you just don’t get with boxed egg noodles. Fortunately, they’re nearly as quick to make!

This year the girls have even joined in on the fun. It takes just 15 minutes or less to make and cook egg noodles. The process has become a family affair with the girls taking turns measuring the ingredients, making dough balls, cutting the noodles, and tossing them into the pot. You may have watched them making pasta on Instagram stories!

If you’ve been thinking about doing the same, make the leap. There’s nothing better than homemade egg noodles and spending time with your family. Egg noodles are quick, easy, and if you have a mixer, it will do the work for you while you prepare your favorite sauce.

Egg Noodles Ingredients

One of the many things I love about egg noodles is that they require just 3 staple ingredients and water. While everyone is rushing out for bread and milk in a snowstorm, I’m dreaming up all the simple sauces I can mix up on a whim with homemade egg noodles because we always have the ingredients on hand.

Egg noodles are made with:

  • Eggs
  • Flour
  • Salt
  • Water

How to Make Homemade Egg Noodles Recipe

Whether you have a pasta maker attachment or not, making egg noodles is easy. Bonus points if you have a mixer because it does a lot of the work for you!

  1. In a mixing bowl or mixer, combine eggs, flour, and salt. Start to mix and gradually add in water until the dough no longer looks dry, up to 1/4 cup.
  2. Fit your mixer with the dough hook (or knead the dough by hand) and knead dough for 3 minutes on low. Dough should become a ball, but if it doesn’t, create one with your hands and let the dough hook do the work again.
  3. Using a pasta press or pasta machine to make noodles in your desired shape. If you don’t have one, you can roll out the dough on a lightly floured surface with a rolling pin until paper-thin. Cut the noodles into strips using a pizza cutter.
  4. Immediately boil noodles in salted water for 4 minutes or hang until completely dry.

Drying Egg Noodles

To dry your egg noodles, spread the pasta noodles out in a single layer on a well-floured baking sheet. The additional flour helps to prevent sticking. Allow the noodles to dry for at least 30 minutes and up to 2 hours.

How to Cook Egg Noodles

Bring pot of salty water to a boil.

Add egg noodles and boil about 4 minutes. Remove from pasta water. To prevent them from sticking together toss them in a little olive oil.

How to Store Homemade Egg Noodles

How to Refrigerate

You can make homemade noodles ahead if you wish. Store dried in an airtight container for up to 3 days refrigerated.

How to Freeze

For longer storage, store for 1 month in the freezer. If freezing, cover the container in saran wrap to prevent the noodles from absorbing any scents.

Toss refrigerated or frozen noodles into a pot of boiling water. Add 1 minute to the cooking time if boiling from frozen.

Store cooked noodles for up to 3 days in an airtight container. They can be reheated in the microwave or by boiling again.

  • Switch to dough hook {or knead if by hand} and knead dough for 3 minutes on low. Dough should become a ball, but if it doesn’t, create one with your hands and use the dough hook again.
  • Using a pasta press or pasta machine to make egg noodles in your desired shape. 
  • Toss into a boiling pot for 4 minutes or leave in piles to dry and refrigerate for up to 3 days.

Julie’s Tips

If your dough is too sticky, add more flour. Too dry and crumbly, add a touch of additional water.
If you’re drying your pasta, make sure it’s not too sticky – you may need a little extra flour.

    I used this for my chicken and dumpling recipe.They are tasty and easy. I doubled the recipe and rolled them out and cut them myself. I let them dry out a bit before dropping them into my chicken broth. My noodles were cut about 3/4 โ€œ wide and about 4โ€ long.

    Very nice and I added a tbl. of olive oil. When I put in my pasta machine I put a small amount of fresh dried parsley and thyme.
