When I’m entertaining, I want the food to be beautiful, fresh, delicious and most importantly, fast.  I have two beautiful little girls that are vying for my attention while I prepare any meal and I don’t want to be rushed or stressed when hosting guests.  Bruschetta is a quick and easy appetizer and can be varied in so many ways.  This recipe is great for summer, just throw it on the grill or in the oven and you’ll have a new seasonal favorite!

Strawberry Brie Bruschetta

Bruschetta is a quick and easy appetizer and can be varied in so many ways.  This recipe is great for summer, just throw it on the grill or in the oven and you'll have a new seasonal favorite!

Ingredients
  

  • 1 baguette sliced at least 1/2″ thick
  • 1 tablespoon olive oil
  • 1 pint strawberries diced
  • 4 tablespoons sugar
  • 8 ounces brie room temperature
  • 1/4 cup basil fresh, chopped

Instructions
 

  • Place baguette on a cookie sheet and drizzle with olive oil. Bake 8 minutes or put on the grill.
  • Puree {or chop fine} your strawberries and add a little sugar. About 1 tablespoon for every 4 strawberries.
  • Remove and top warm toasts with puree, freshly sliced brie and basil.
