I never cared for tarts until I recently took a bite of a friend’s at a favorite neighborhood Italian restaurant.  It was imported from Italy but tasted like it was made just minutes before it was served.

I could taste a hint of lemon, sweet mascarpone, and cream.  I recreated it using a sugar cookie crust!

This lemon berry tart is deliciously easy and elegant. It’s perfectly patriotic to celebrate the 4th of July!

Lemon Berry Tart Ingredients

Crust

  • Butter – Salted or unsalted butter, softened. You can get my tips for softening butter here.
  • Powdered Sugar – If you don’t have any on hand you can pulse granulated sugar in a food processor until light and fluffy or substitute granulated sugar.
  • All Purpose Flour

Lemon Filling

  • Heavy Cream – Also often labeled as whipping cream.
  • Mascarpone Cheese – The creamy, flavorful base for this tart.
  • Powdered Sugar – Gives the tart luxurious texture. If you don’t have any on hand you can pulse granulated sugar in a food processor until light and fluffy.
  • Lemon Juice – Freshly squeezed or 100% lemon juice.

Fruit

  • Red, White and Blue Berries – Raspberries, blackberries, strawberries and blueberries all work well.

How to Make a Lemon Berry Tart

  1. Prep – Preheat oven.
  2. Make Crust – Cream butter and sugar. Add flour a half cup at a time. Press into ungreased tart pan and bake for 25 minutes. Remove and allow to cool on wire rack.
  3. Make Filling – Whip heavy cream, gradually increasing your speed until stiff peak forms. Beat in powdered sugar and lemon juice at medium speed, one tablespoon at a time. Add mascarpone, blend well.
  4. Fill – Add mixture to cooled crust.
  5. Garnish – Load it with seasonal berries and fruits.

Tips

  • Remember to leave the pan ungreased for a perfect crust
  • It’s very important to NOT over whip the cream. Overmixing will cause the cream to curdle, and you’ll have to start over
  • Top with your favorite in-season fruits for a fresh taste

Lemon Berry Tart

Ingredients  

Crust

Filling

  • 1 cup heavy cream
  • 8 ounces mascarpone cheese
  • 5 tablespoons powdered sugar use more to preference up to 8
  • 2 tablespoons lemon juice

Instructions 

Crust

  • Preheat oven to 300 degrees Fahrenheit.
  • In a medium mixing bowl, cream butter and sugar. Add flour a half cup at a time and blend until combined.
  • Press dough into ungreased tart pan. Bake 25 minutes or until slightly golden. Remove and allow to cool on wire rack.

Filling

  • Meanwhile, in a large mixing bowl whip heavy cream, on low gradually increasing speed to max until a stiff peak forms.
  • On medium speed, beat in powdered sugar one tablespoon at a time. Add lemon juice and mascarpone until just blended.
  • Add mascarpone, blend well.
  • Add mixture to cooled crust.
  • Top with seasonal berries or fruits of your choice.
