I just can’t resist caramel. On a sundae or cheesecake, in bars, cookies & pies, or just {shhhh} on a spoon. I wanted to integrate caramel with another one if my favorites – wine. I knew they paired well together, but would it make a great chocolate? YES! It was love at first bite. And so today, I’m sharing my recipe for chocolate wine caramels. I’m so happy it feels like Valentine’s Day already!
I find so many candy recipes intimidating because they often require a thermometer. As distracted as I often am, I worry it will flop & I’ll have to start over or forgo it all together. Who has time for that? This recipe is foolproof, but yields indulgent chocolates that are simply irresistible.
Chocolate Wine Caramels

- 1 c sugar
- 2/3 c heavy cream
- 9 ounces chocolate {I used bittersweet chocolate chips}
- 2 Tbsp red wine
- 1 c chocolate
Instructions
- Cook sugar over medium-high heat just until sugar has melted.
- Swirl until sugar is golden in color. Remove from heat.
- Add cream and return to simmer, stirring until smooth.
- Add wine and remove from heat.
- Add chocolate and stir well.
- Cover and chill for 2 hours.
- Melt chocolate in microwave in 15 second intervals until smooth. Roll into balls, dip in chocolate & place on wax paper to chill until serving.

Is the 1 cup of chocolate coco powder you add to the caremel? and the bittersweet chocolate is what you melt for dipping?
No cocoa powder ????. Bittersweet chocolate gets blended into the caramel and second chocolate coats them. Enjoy!
