Steam frozen spinach in the microwave according to package instructions and drain excess liquid.
10 ounces spinach
In a small bowl, warm cream cheese in the microwave for 1 minute to soften.
6 ounces cream cheese
Combine spinach, cream cheese, mayo, sour cream, onion flakes, garlic, red pepper, parmesan, shredded jack and stir well.
6 ounces cream cheese, ¼ cup mayonnaise, ¼ cup sour cream, 10 ounces spinach, 1 tablespoon dried minced onion, 2 teaspoons minced garlic, ⅓ cup parmesan, 4 ounces monterey jack cheese, ⅙ teaspoon crushed red pepper flakes, fresh ground black pepper
Bake uncovered for 10 minutes. Stir, and garnish with more crushed red pepper flakes or a little fresh diced red pepper (for color) and serve.

Avoid pre-shredded cheese, as it’s covered in a flour like substance that helps it resist sticking and melting.
Spice it Up – Add an extra scoop of red pepper flakes, jalapenos or a little tobasco for an extra kick if you know your crowd can handle it.

Bake it Longer – Love it when your cheesy appetizers get a little brown and bubbly on top? Don’t hesitate to bake this dip a little longer (up to 35 minutes or so, watching it carefully) to reach that level of golden perfection.
Substitutions
You can substitute fresh spinach. Steam it according to package directions, and be sure to drain and dry before adding to the dip mixture.

Serve with crackers, crostini, chips or veggies.Enjoy on top of burgers, in a grilled cheese or stuffed chicken.
To Store
Refrigerate covered for up to five days. Before warming, allow to set out 20-30 minutes to prevent dish from breaking between refrigerator and oven.
