Preheat oven to 350°F. Grease small baking dish and set aside.
Steam frozen spinach in the microwave according to package instructions and drain excess liquid.
10 ounces spinach
In a small mixing bowl, add spinach, cream cheese, mayonnaise, sour cream, parmesan, Monterey jack, minced garlic, onion flakes, red pepper flakes, and black pepper. Using a rubber spatula, stir until well combined.
6 ounces cream cheese, ¼ cup mayonnaise, ¼ cup sour cream, 10 ounces spinach, 1 tablespoon dried minced onion flakes, 2 teaspoons minced garlic, ⅓ cup shredded parmesan, 4 ounces Monterey jack cheese, ⅛ teaspoon crushed red pepper flakes, ⅛ teaspoon black pepper
Bake uncovered for 10 minutes. Remove from oven, stir, and add optional garnish of crushed red pepper flakes. Serve with vegetables, tortilla chips, crostini, or crackers.

Grate parmesan and Monterey jack for best results and the creamiest texture. Pre-shredded cheese is covered in a flour-like substance, which resists melting.
Make Ahead
To make ahead, prepare mixture, cover and refrigerate. Bring to room temperature 20 minutes while pre-heating oven and bake. Alternatively, make, cover and bake, bring to room temperature, cover and refrigerate and warm to serve.
Substitutions
To substitute fresh spinach and steam according to package directions, and be sure to drain and dry before adding to the dip mixture.
Serving Suggestions
Serve with crackers, crostini, chips or veggies.Enjoy on top of burgers, in a grilled cheese or stuffed chicken.
To Store
Refrigerate covered for up to five days. Before warming, allow to set out 20-30 minutes to prevent dish from breaking between refrigerator and oven.
