Ingredients

  • 1 c flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1 c canned pumpkin puree
  • 1/2 c sugar
  • 1/2 c brown sugar packed
  • 1/2 c oil
  • 1 c chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Grease or line mini muffin tin.

  2. Combine flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.

  3. Add eggs, pumpkin puree, sugars, and oil.  Mix until just combined.

  4. Fold in chocolate chips.

  5. Bake 16-22 minutes until a toothpick comes clean. Remove from oven and allow to cool 3 minutes.
