In a medium pot, combine water, sugar and pineapple chunks and bring to a low boil on medium heat.
Crush pineapple and stir. Remove from heat. Strain.
Mojito
In a highball glass or shaker, combine pineapple simple syrup, limes and mint. Muddle or shake well to release mint flavor and juices.
Strain and pour into cocktail glass. Add rum and stir. Fill the glass with ice and top off with club soda.
Add pineapple cubes, a sprig of mint and lime slices or wedges to garnish.

Skip making pineapple simple syrup and simply substitute white rum for pineapple rum.
Purchase fresh cubed pineapple.
How to Make a Pitcher
1 cup pineapple simple syrup (as listed on recipe card)
1 bunch fresh mint (discard stems – 50-60 mint leaves)
4 fresh limes, quartered into wedges
4 cups ice cubes
12 ounces white rum
4 cups club soda
Make Frozen Pineapple Mojito
Same ingredients… simply blend with 3-4 cups of ice as follows.
Squeeze – lime juice and remove mint leaves from stems.
