This fresh sherry vinaigrette uses only four ingredients and can be whipped together in just a couple minutes. It's a zesty, healthy addition to salads, wraps, sandwiches and more!
If you aren’t using the dressing right away, shake it before use as the ingredients will separate.
We love the O brand aged sherry vinegar. You can use whatever you have on hand, though.
Or, make your own sherry vinegar by infusing 3/4 parts red wine vinegar and 1/4 part sherry.
Substitutions and Variations
Add fresh chopped herbs, a little fresh squeezed lemon juice, or a teaspoon of fresh minced garlic for variations.
Add a tablespoon of white granulated sugar to sweeten this dressing a little.
How to Store
If your sherry vinaigrette contains only vinegar, oil, and salt and pepper (as indicated in this recipe), you can store it at room temperature for up to one week in an airtight container, preferably in a dark space like a cabinet.
You an also store this vinaigrette in the fridge for up to 2-3 weeks. However, if you've added fresh fruit or herbs, you should only store in the refrigerator for up to a week!
