Breakfast Tacos

Ingredients
4
eggs
size large
salt and pepper
to taste

tortillas
corn (or flour - your call!)
Optional Toppings
1
avocado
diced
¼
cup
cotija cheese
or shredded colby jack

tablespoons
pico de gallo
or salsa
green onions
diced
cilantro
fresh, chopped
potatoes
cooked, diced
meats
Bacon, sausage, chorizo
Instructions
Prepare your scrambled eggs - Heat a pan over medium-low heat with a pat of oil or butter. Whisk the eggs, and pour eggs into pan to scramble.
Chop or prepare any other fillings or toppings - Dice your avocado and cilantro or prep your pico de gallo.
Assemble - Add eggs, any additional fillings and toppings into warm, soft tortillas.

Notes
For the best scrambled eggs, add a splash of milk or cream. Heat over very low heat, gently pushing around pan with a spatula.
Tacos make an excellent appetizer and party food too. Set up a taco bar with a variety of toppings and let your guests go to town.
Squeeze a lime over the top of your breakfast tacos for a delicious burst of citrus flavor.
