Prep - Line a sheet pan (that fits in your refrigerator) with parchment paper. Set aside.
Prepare - In a microwave safe bowl, add chocolate. microwave 30 seconds and stir. Continue to melt in 15 second increments, stirring in between each, until smooth. Pour melted chocolate onto parchment lined sheet pan and use a spreader or spatula to spread chocolate evenly between ⅛-¼" thick so it's thick enough to break and dip, but not overpowering. Transfer to refrigerator until set (approximately 15 minutes).

Remove from refrigerator and slide parchment onto cutting board. Using a pizza cutter or large knife, break chocolate into pieces. Refrigerate until ready to serve and chill while serving.
