Substitutions
Potatoes - Russet or Yukon Gold potatoes work well, but you can use whatever you have on hand.
Truffle Oil - Truffle oil is olive oil infused with real truffles for a subtle but delicious truffle flavor. Use a high-quality truffle oil for the best flavor. I tend to use white truffle oil that is made with white truffles for a subtle, garlicky flavor, but you can use black truffle oil if you prefer. Black truffle oil has a powerful, earthy aroma and flavor.
Parmesan - Fresh grated parmesan from a block is always my go to. Finely grated or shredded parmesan works best with fries. Substitute Grana Padano or Asiago.
Tips To Make Fries Crispy
Soak strips in cold water after cutting for 30 minutes to reduce starch.
Dry thoroughly.
Broil the last 30 seconds to crisp.
Additional Tips
Consistency – Consistency is key when cutting fries so they bake evenly.
To Store
Freeze – Place in a freezer bag and freeze up to 3 months. Reheat on stovetop over medium heat with 1 tablespoon of oil, in a preheated oven for 7-10 minutes.
