Ingredients
1
pound
green beans
3
tablespoon
butter
1
shallot
finely chopped
fresh cracked pepper
Instructions
Place clean, trimmed green beans in a saucepan and cover with 1 c water.
Bring to a boil over medium heat {about 5 minutes}.
Pour green beans over a strainer filled with ice.
Meanwhile, melt butter and sauté shallot for 3 minutes. Return green beans to the pan, toss and serve.
Notes
Use fresh, and if possible, organic green beans.
Don't overcook the beans, yo still want to have a bite to them.
Be sure to drain them over ice, this way they will keep their vibrant color.
