In a mixing bowl/mixer, combine flour, eggs and salt. Start to mix and gradually add in water until the dough no longer looks dry, up to 1/4 c.
Switch to dough hook {or knead if by hand} and knead dough for 3 minutes on low. Dough should become a ball, but if it doesn't, create one with your hands and use the dough hook again.
Using a pasta press or pasta machine to make egg noodles in your desired shape.
Toss into a boiling pot for 4 minutes or leave in piles to dry and refrigerate for up to 3 days.

If your dough is too sticky, add more flour. Too dry and crumbly, add a touch of additional water.If you're drying your pasta, make sure it's not too sticky - you may need a little extra flour.
