A fun and festive Christmas Salad that looks as good as it tastes. This Christmas wreath salad is always memorable and is quick and easy to make!

Ingredients

spinach
1/2
cup
dried cranberries
1/4
cup
walnuts
3
ounces
goat cheese
Vinaigrette
1/2
cup
raspberry vinegar
1/4
cup
olive oil
1
teaspoon
white granulated sugar
2
teaspoons
dijon mustard
Instructions
Combine vinaigrette ingredients, shake or whisk well.
Toss spinach (and cranberries and walnuts if you want more) in vinaigrette.
Shape into a wreath on platters or large plates.
Top with cranberries and walnuts.
Roll small amounts of goat cheese into balls and adorn your salad wreath.
Notes
Can substitute dressing with
balsamic vinaigrette
,
red white vinaigrette
, or
white wine vinaigrette
.
You can make the vinaigrette ahead of time and keep it in a sealed jar in the fridge for several days, just shake before use.
You can make the salad ahead of time and drizzle the vinaigrette over it just before serving.
Use the freshest and best quality ingredients you can, preferably organic.
