Banana Bread without Baking Soda or Baking Powder

Ingredients

unsalted butter
softened

cup
white granulated sugar
½
cup
brown sugar

eggs

ripe
bananas
mashed

teaspoon
vanilla

all purpose flour
sifted

cinnamon

teaspoon
salt
Instructions
Preheat oven to 350°F. Grease a 1 pound loaf pan.
In a large mixing bowl, cream butter and sugars for 3 minutes. They'll become light in color and fluffy.
Add eggs, bananas and vanilla until just combined.
Gradually add flour, cinnamon and salt until just combined. Do not over mix. Optional: Fold in nuts or chocolate chips.
Pour batter into prepared pan. Bake 55 minutes or until a toothpick comes out clean.
Allow to cool on a wire rack. Invert to remove. Slice and serve!
